Cakes / Cappuccino Cake.

Cappuccino Cake.
Converted from the BBC Good Food website.
I used a 15ml Tablespoon.
250g butter, softened cubed
250g light soft brown sugar plus 2-3 tbsp extra
300g self-raising flour
4 eggs, beaten
50g walnuts, toasted, optional
200ml very strong coffee (made fresh or with instant), cooled.Then sweeten with the extra soft brown sugar.

For the frosting
500g tub mascarpone
2 tbsp light soft brown sugar

Heat oven to 180C/fan 160C/gas 4. Butter 2 x 20cm sandwich tins and line the bottoms with baking paper.
1.Place the toasted walnuts into the TM bowl.Blitz 3 sec/ speed 5. Put aside.
2. Put the cubed butter and sugar into the TM bowl and beat 30sec/ speed 4.
3. Scrape down the sides of the bowl.Insert the butterfly and beat until pale and fluffy 3mins/ speed 3 stopping occasionally to scrape down the sides of the bowl.Remove butterfly.
4.Add the beaten eggs,flour,walnuts and half of the coffee mixture.
5.Mix 30sec  :-: speed 4.
6. Spoon the cake mixture equally between the two prepared sandwich tins.
7. Bake in the preheated oven until well risen and cooked.
8. Leave to cool in the tins for 5 minutes.Turn out and sprinkle with 4 x 15ml of the coffee mixture.
9. Leave to cool completely.

Frosting.
I halved the frosting and it was plenty.But by all means use the original amount if you want.
I used my hand mixer.
Beat the mascarpone together with the soft brown sugar.Add the remaining coffee mixture ( remember to use half the quantity if halved the frosting ingredients) and beat until smooth and creamy. Use half of the frosting to sandwich the cakes together.Spread the remaining frosting on the top.
Decorate.I used chocolate covered coffee beans.

Used the recipe chip.
A delicious recipe that is very similar to Quirky Cooking's Fried Rice.
There are many variations to making this recipe and I used Hoisin sauce and Basmati Rice.My rice needed cooking an extra five minutes.Also I think you should up the speed to speed 3 for the Varoma cooking part.
It does make six large portions so cut back on the amount of rice for less people.
I can see this becoming a firm favourite as we all loved it.

A very disappointing recipe.I tried it,hated it and then binned it. :P

My opinion: Need to reduce the stock concentrate to 1 Tbsp.
Use a more complementary spice/herd to the tomato base soup rather than cumin.
The pasta needs reducing to 50g.

There are far better soup recipes out there to try.

I used the recipe chip.
Very fiddly to make,ugly to look at but very tasty.After reading the ingredients list I decided to add grated Parmesan cheese (90g) to the stuffing.Increase the herbs if not using cheese.I thought the stuffed onions were the tastiest but DH and DS thought they were all good.
I served them with baked beans to up the protein.

I followed the recipe chip,the result was a smooth velvety soup.I used a Butternut Squash/ Pumpkin.I did cook the soup an extra 5 minutes as I'm always conscious of cooking the potato well.The ginger gave the soup a beautiful fragrance and the cashews a creaminess.
This recipe is totally different to the new EDC.
I might tweak it next time by adding a teaspoon of vegetable stock concentrate.
Just a warning, be careful if you use the white pepper as stated as it more potent than black.

Non Food Recipes / Bedlam's Silver Cleaner

( Didn't want Denise's tip on how to clean silver to get lost in the Christmas Challenge so have copied it here ;D)

Alfoil and bicarb of soda is great for silver. Tablespoon of bicarb and crunched up Alfoil  in container with silver, pour over boiling water.  My Nan used this method. Then polish with a soft cloth, sometimes if badly tarnished, you need to do it a couple of times.

Non Food Recipes / Chookie's Jewellery Cleaner

(This little gem is getting lost in the Christmas Challenge 2014 so I have copied the recipe here)

Today I am making small kits to clean jewellery .  They will contain a small jar with a 1/2 dishwashing liquid and 1/2 cloudy ammonia.  Add a soft small tooth brush and a soft cloth . The instructions will say to mix a dessertspoon of the mix with I cup of hot water, soak rings in cup for 5 minutes, brush gently with tooth brush,  rinse and dry with cloth. Amazing stuff.

We would love you to share Festive ideas,recipes (old or new) with us all here on the forum. We hope you have fun with this and as usual photos are really appreciated. ;)

Starters and Snacks / Shami Kebabs.

Adapted from a recipe by Delia Smith.
225g minced lamb
1 small onion,quartered
1 tin of lentils ( mine was 390g,drained weight 235g) rinsed and drained.
1 rounded teaspoon of cardamom masala.( or your own garam masala)
1/2 tsp salt
A very good grinding of black peppercorns.
1 egg,beaten
Oil for frying ( 1-2 Tbsp)
1 rounded Tbsp seasoned flour.

1. Place the onion in the TM bowl and chop 5sec/speed 5. Scrape down with a spatula and repeat.
2. Add half of the lentils to the TM bowl and chop 10sec/ speed 8. You want a paste.If necessary repeat.
3. Scrape everthing into a bowl and add the minced lamb,salt,pepper,cardamon masala ,remaining lentils and beaten egg.Mix with your hands ( or fork)
4. Using your hands form into 12 patties.
5. Heat a little oil in a frying pan and when hot dip the patties into the seasoned flour.Fry them on each side for 2-3 minutes,adding more oil if needed.
Suggested serving: Serve on a bed of thinly sliced raw onion with coriander leaves sprinkled with lime or lemon juice with mango chutney on the side.
Serves 3-4 or 6 as a starter.

This is a complete for two people consisting of a soup cooking in the TM bowl,rice cooking in the simmering basket,Chicken and vegetables steaming in the Varoma and Apple slices ( or pear) for dessert steaming in parchment in the Varoma tray.Whilst you keep the rice and soup warm you make a sauce to finish off the chicken dish that is then placed in the oven for 20 minutes.
There is quite a bit of prep for this meal but well worth the effort.You need a big appetite too :D :D Plenty for the three of us.
I did add an extra five minutes Varoma steaming time as my rice wasn't quite cooked after 20 minutes.Maybe a bit of extra sauce wouldn't go amiss too.
