Thanks Cookie, that would be awesome, and I've never tried sago before so that would be interesting. I also made it with mango purée last night and added an extra teaspoon of gelatin to compensate for the extra liquid in the mango (which replaces the chocolate). Unfortunately I didn't have any coconut milk so had to use evaporated again.  It still tastes really yummy but needs even more gelatin as it wasn't quite set enough, it was quite 'mousse-y'.  I'm guessing even as much as 5 teaspoons perhaps! Because I used 350g puréed mango... I haven't much experience with gelatin but happy to experiment and eat my errors. I love the texture of the chocolate one, so silky... would love to replicate that with the mango and then even try other ones like strawberry or even banana! And sago would add another dimension ...

I made this today and the result was an amazing silky smooth pudding. I took a photo but my ipad wont let me load it... But the result looked exactly like the other photos with the lovely frothy top. Dividing into 6 portions is a good idea... I divided mine into 3 glasses hence we had a double serve each which was too large and rich (but didn't stop us finishing it). I will definitely make again but keen to experiment with some mango and coconut milk next time for a mango pudding.

Wow that looks nice fundj. Do you think this would work with frozen mango (that I have defrosted) ? Would I need to drain the water away first if it is possible...? I've never made jam either... but have heaps of mango in the freezer from our recent 'crop'.

I felt the same. The two of us are staying in a hotel in town 24th and 25th, we got a local rate, breakfast is included in the deal. I will pack a little esky with some drinks and yummy (yet simple) nibblies that we will have by the pool and we will just snack through the day and probably just read, swim, go for a walk and chill out.  I haven't decided what to make yet, but not stressing... maybe even get some fruit, ham, prawns and crackers and make a dip the night before. Might take my gingerbread men and chocolate fudge from the freezer too. But knowing we have the hotel booked makes it feel like at least we are doing something special and looking forward to it now.

I like to always keep a good supply of whole nuts, seeds and favourite dried fruits so you can make your own muesli, cakes, biscuits etc. Many of the recipes you can adapt to what you have in the pantry so I tend to stock my favourite ones and use them as substitutes. Essentials could include milk, flour, eggs, yeast, butter, olive oil, meat (in particular I like the thermie for recipes with chicken thigh fillets), rice, pasta... With fruit and vegies, get what's fresh and on special (or the local markets are great for this) - then just do a search on the forum to make things to suit what you have to save you buying extra things. All depends on what you like cooking though... and some 'must have' ingredients may not suit everyone's tastes so it depends on your individual preference.

I love this fudge too!!  I love the original version but its fun to experiment. I have omitted the white chocolate and all the sugar and replaced with 70% dark choc and a teaspoon of peppermint essence, although next time I will make it two teaspoons of peppermint essence as it wasn't quite minty enough. Oh and I used the full packet of Oreos rather than half. Next time I was thinking of liqueur also as I have some Kalhua, for a coffee flavour and maybe another one with the butterscotch schnapps I have in the cupboard...

I've made this a few times and I agree, the texture is definitely not like a banana bread or cake is expected to be, and mine too always has a couple of cracks on the top. I wondered if it was something I was doing wrong (dense texture) but I continue to make it because we really like the taste! I mill the dates with the nuts to prevent sticking and it creates a nice crumbly mixture that comes away easily. I make it in a slice pan (and the overall shape doesn't have the big hump) and think of it as a slice rather than a cake or bread otherwise I too, would be disappointed and abandon it.  I like the combination of dates, walnuts and banana and also with the milled whole wheat grains it is quite wholesome and filling slice/snack. I reduced the amount of sugar a bit because as you say, the dates do give a lot of the sweetness. I made it again today with hazelnuts and raisins as I didn't have the other ingredients and the result was very similar.

These are lovely! I've made them twice with sweet potato. The first time was in the oven as per your recipe and the second time (tonight) we used the recipe as just mashed potatoes rather than baking (impatient). Very creamy, I think the egg yolk must cook when wizzing it through the hot mix (so I don't think we are eating raw egg yolk...)  :-\

I made this tonight as half the recipe - and it was very flavoursome, the dried apricots really make this dish!  A few tweaks to suit my pantry content: I used chicken breast which still turned out very tender.  I didn't have a packet of french onion soup, so I used one onion and 2 cloves of garlic (sauted first in the tmx with a little oil) with a tablespoon of vegetable stock concentrate instead. I will do this next time instead of the packet soup mix.  I also left out the chicken stock altogether but there was still plenty of sauce. In the last couple of minutes I added some frozen peas. It didn't need any more salt due to the stock, but I added lots of black pepper. This is going to replace the recipe I had been using for years beforehand, so thanks for this  :)

These taste awesome, I made them into small bars by freezing in a square silicone cake tin - then sliced when both layers frozen.  My photos don't do them justice because they have a definite 2 colour layer like the commercial ones you buy (my photo is a bit over exposed and makes it look like they are all the same colour). Next time I will try coconut cream and I like the idea of the icy pole moulds too. The recipe made about 20 pieces which I cut up and store in plastic container separated with baking paper. They are easy to eat in a small bowl with a small fork (spoon might bounce around a bit until they melt a bit). Yummy - thanks for the recipe !!

We have an abundance of mangoes on our property in Darwin so I made this yummy cake. The cake itself is based on the EDC 'Too Easy Chocolate Cake' (without the choc).

I put some melted butter sprinkled with brown sugar in the cake tin, and topped with my freshly sliced mangoes in one layer. I then made the cake recipe minus the cocoa and topped this over the mango mixture and cooked for the recommended time in the EDC book. But would ofcourse work with your favourite cake mix.

(I mistakenly thought my spring form cake tin was water tight and unfortunately had a 'leak' of dripping mango juice in the oven... yet to clean that off and will use a tray next time or a non-spring form tin)...  :-\

Thanks for this salad recipe, it was a nice change from the usual. I didn't have the orange blossom water so left it out and didn't have mint so used a bit of basil from the garden, although mint would have been nicer. Served with weber BBQ steaks, yum !! A keeper!

Same here. Mine didn't rise on the first rising either. But turned out perfectly and doubled in size in the oven. Love these !
