Title: Apple & Mushroom Soup

Name of Recipe: Apple & Mushroom Soup - a la John Tovey

Number of People: 6-8

Ingredients:

200g onions, peeled & quartered
100g butter or oil
400g apples, cut into large chunks (there is no need to peel or core them)
400g mushrooms, chopped if large
100ml dry sherry
800ml stock, (beef is good or vegetable for vegetarians)
Salt & Pepper
Fresh cream and herbs to garnish


Preparation:

Place onions in bowl and chop for 5 seconds on speed 7, scraping down and chopping more if needed. Add the butter or oil and sauté for 4 minutes at 100ºC on speed 1.

Insert apples into TM bowl and process for 7 seconds at speed 7 to break up apple into small pieces. Cook for 15 - 20 minutes at 90°C on speed 2 until skins are very soft. Add mushrooms and blend for 7 – 10 seconds at speed 7 to break up mushrooms a little. Use the spatula through the lid to push mushrooms down if needed. Once the mushrooms are in smallish pieces add the sherry and cook for 15 - 20 minutes at 90°C on speed 2.

Blend for 30 seconds by slowing going from speed 1 to speed 9. Make sure the measuring cup is firmly in place when doing this step.

Add the stock and cook for another 3 minutes at 90°C on speed 2.

Check for seasoning before placing in bowls.

Garnish with cream and herbs and serve with a glass of sherry.

Tips/Hints:

The recipe was based on one by John Tovey from Miller Howe restaurant in the Lakes District.

By using the TMX you don't need to peel or core the apples.  The apples give body and texture to the dish.

The soup can be made more luxuriant by adding cream to the mix or truffle salsa.

ThermomixBlogger Helene - I didn't follow your recipe exactly as I assumed my son wouldn't want to stray too much from his usual fare, used a lighter hand. Added only one apple, a pinch of mace, and some Marsala instead of Port, as there wasn't any port around. MMMMMMmmmmmmm good! Great idea. Will try it again soon when no son at the table, and will write about it on the blog too. A great autumnal soup that is well suited for our Canadian tables. Thanks!

It was quite interesting for me to use apples in a soup. I used white wine instead of sherry. I didn't have any. I used 50g of olive oil instead of 100g to make it lighter.

Could this one be cooked at varoma temp with reduced time?

Probably could - you could pulverise the fruit and mushies and cook less time.

This was one of my earlier conversions and I may have been following the recipe more than needed.

Worth trying to shorten the cooking time - even if you don't use Varoma temp.

Starngely enough I was thinking about this recipe today as I saw an apple in beef stock recipe from France that was weird - but may taste OK

We're coming into our fall season here in Canada and today all the planets lined up for me to make mushroom soup. I had regular mushrooms and Portobellos on hand and thought I'd just check online for some inspiration before starting. Stumbled upon Thermomixer's blog post for this Apple/Mushroom soup recipe and was instantly hooked in!

I had been given some apples from a friend's orchard, so that was perfect. I didn't follow your recipe exactly as I assumed my son wouldn't want to stray too much from his usual fare used a lighter hand. Added only one apple, a pinch of mace, and some Marsala instead of Port, as there wasn't any port around. MMMMMMmmmmmmm good!  :P Great idea. Will try it again soon when no son at the table, and will write about it on the blog too. A great autumnal soup that is well suited for our Canadian tables. Thanks!

Thanks Helene - LOL - this was the first recipe that I did when I was going to make one recipe from every cookbook that I have - only managed about 3 before I broke out to do anything that I faniced.

Will have to get back to going thru the books.

Thanks farfallina - it is intersting to use apples, but as I said on the blog, a chef used them in pumpkin soup too !!!!
