Yesterday I started on these sourdough overnight coffee scrolls and finished them off and baked this morning.  So, so good.  Only used half the coffee icing and it was plenty.  The bread part was so soft and fluffy.  DH and I had one and I've put the rest in the freezer.  Very happy with these  :D

I hope your holiday has re-energised you Judy, sounds like you had a good time.  :)

Grandson's dad picked him up yesterday and taken him back to Adelaide for a few weeks.   :(

A bit of cooking and tidying up the freezers are my plans for today.  Am enjoying the cooler weather at least.  :)

Julie, thanks for those 2 links.
I soak vanilla beans in Vodka.   After a couple of years when it is looking a bit weak I drain the liquid off and remove the beans . I mince the beans in the TMX.  It makes a stringy paste.  Still has flavour.  I use this in dishes where you can’t see the paste.  I keep it in the fridge. I will try your method. Thanks.
I think the kids would love those chicken nuggets. I usually use just Chicken breast , cut into cubes.  Pinko crumbs for coating.

Yes I also have vanilla extract and vanilla powder that I both make too.  Don't use much powder but sometimes recipes call for it.

My GS loved the nuggets so will make them again for him and I will try making burger patties from the mix too to see what they turn out like made into a burger.  :D

I needed to replenish my vanilla bean paste, used up the last a couple of days ago.  I used the same recipe as last time from Changing Habits as I was really happy with it.  I still had some of the Maleo from last time so it didn't take long at all to make some.  Also my beans (being newer) were more soft/plump so they blitzed down very well and I didn't need to strain any fibres out like I did last time.  Once cold it goes a lovely thickened/gloopy paste.

Of course you can't scrape all the vanilla seeds out of the bowl so I made up a half batch of Thermomumma's custard to incorporate the seeds.  Will think of something to use it with but I couldn't let them go to waste  ;D

I've also made these chicken nuggets using the recipe below.  Have read that kids love them.  I had everything in so made a batch.  I used breadcrumbs instead of ground almonds.  I got 22 out of the recipe..  I put 2 aside and I frozen the rest to take out when needed.  Have read they bake well from frozen but I may try in my airfryer to see if they come out okay.  I lightly fried the 2 I put aside as I was curious and I thoroughly enjoyed them in a sandwich with a little mayo.  The zucchini and carrot give them moisture.  I think the mixture would be great formed into burger pattie size served with salad in home made burger buns.  The crumb mix makes enough for 2 - 3 lots so I've put that in the freezer for now.  Will make for a quick meal next time.  :)

Bits & Pieces today  ;D

My grandson is coming down tomorrow for the weekend so this morning I made Tenina's vanilla ice cream so I could chill the custard for a few hours until cold then churned it.  It's now in the freezer.

I then made Tenina's Ice Magic and checked that it worked on a scoop of the soft serve ice cream.  It worked  ;D

I also made up some brown sugar as I had less than a cup left of my last batch.  I made 2kg in Nov 2019 in my KA mixer but today I tried doing it in the TM using the cookidoo method.  You only make 250g at a time which takes less than a minute so you can then do as many lots as you wish (only doing 1 portion at a time though to get the molasses right through the sugar).  I made 4 or 5 lots not sure now but I will do it this way from now on, so easy.  It's also cheaper than buying ready made.

I love making stuff like this especially when it works and I find it costs less.  I make my own baking powder now too and keep it in the little container that you buy the store bought stuff in.   :D

K atie, sorry to hear of your troubles at present.  Hopefully your son will be okay, will be feeling low for a few days I would think.  You take care too  :)

Judy, good to hear you are having a good time, will do you the world of good I'm sure.  :D

Sounds like another great day out Cookie.  :D

I've had a really nice day too.  We were down the beach by 5.30 but it was so dark from the clouds it was like night time and oh so windy.  We walked a bit but it wasn't very nice so we turned around and came home.

I had a chiro appointment then some grocery shopping.  When I got home DH asked if I'd like to go out to lunch so we went to a local bistro and I even had a glass of bubbles  ;D

About 10 mins after we got home the postie dropped off my new bag.  Absolutely love it, even nicer than what I thought it would be.  Now just relaxing for the afternoon, DH starts night shift tonight.  :D
