We had this for dinner two days ago, as DD not so keen on eggplant I might have to cook two different things.  Our eggplant from the garden is huge, still a bit firmed after steamed but cook nicely after  in the oven.

Did anybody try freezing this? I have an eggplant that needs using but doesn't fit in my meal plan for another couple of weeks...  ;)
