Title: Chocolate Cake -Vegan (egg, dairy, soy free, and failsafe)with Vegan Buttercream

Chocolate Cake -Vegan (egg, dairy, soy free, and failsafe-if you can tolerate a few amines with the cocoa)
Serves 20, very large cake. Or 24 cupcakes


650gms all purpose flour (or 3 cups)
70 gms cocoa powder (or a decent half a cup)
2tsp baking soda
1tsp salt
250gms sugar
220gms brown sugar
500mls water
250mls canola oil
1Tbs vanilla extract

Preheat oven to 180

Pop water, canola oil, vanilla, salt, sugar, brown sugar and baking soda into  *:, mix on 4 for 20 seconds.

Sift in Flour and Cocoa, (I haven't attempted this without sifting), mix for 30 odd seconds until combined.

Bake 25-30 minutes, until toothpick inserted comes out clean.
Remove from oven and let cool for 10 minutes. Transfer cupcakes to a wire rack to cool completely before frosting with Chocolate Vegan Buttercream.

To make a cake: divided the batter between 2 9-inch round cake pans that have been sprayed with non stick spray. sprinkle each layer with half the Chocolate chips (opt). Bake at 180C for 40 minutes. Let cake cool for 10 minutes, then invert onto a wire rack to cool completely.

Chocolate Vegan Buttercream
(makes perfect amount for 24 cupcakes or the cake option)

    * 3C icing sugar
    * 1/2C cocoa powder
    * 1/2C marg
    * 3 1/2 -4 tbls water
    * 1 1/2tsp vanilla extract

Sift together icing sugar and cocoa powder into a bowl. Add margarine, water and vanilla and beat well with an electric mixer until frosting is smooth. I don't bother making this with thermie, as it only takes a minute to whip up with a hand held blender, and easier to clean up with a blender and bowl!


I have made this as birthday cakes for my little guy, and also for parties without allergies, non know the difference, it's just a lovely chocolate cake!

Hi Lee,

Do you think these would cook in the Varoma if I was to put them into little silicone moulds & steam them?  Trying to find a pudding to replace the tradiitonal lemon coconut puddings at a Varoma demo where they are egg & gluten free.

Hey Janeee,

I'm not sure, when is your demo? I will probably be making another cake in the next week, and can keep some aside and give it a try. I haven't tried it with no gluten though.

 :D It is a bit of a ripper Ceejay! No one knows that it is free of anything ;)

I should add, the pic on the thread is about a 1/4 of the mix in a cake tin, it does make an awful lot of cake! So that is why it isn't ver deep, and looks a bit more 'slicey'. LOL.

It's great when you find a recipe free of so many things, that actually works!

It has made our life a whole lot easier (ds soy/dairy free, and failsafe, his bestie is egg anaph and dairy free too!)

I'm about to see how forgiving this recipe is....

Added all wet ingredients, and cocoa, mixed.

chucked in 450gms of flour, to find i had no plain flour left ( :o), so topped the rest up with self raising... also cut the cocoa in half.

Oh, and didn't sift the flour,  :D.

It's about 15 minutes away, smells alright, cooking alright.  ;)

Oh, and I split the mix up, and baked in 2 lamington trays....

And, it turned out fine! ;D

So you can abuse this cake, no worries, it won't mind!

Just wanted to say how awesome this cake is/was.

I have just gone DF and am still BF my DD who is 1 today so I made this so we can both have it.

Yes JD, he had a construction themed party, lots of tip trucks and diggers. His father is a diesel mechanic, I can't imagine where he gets his enthusiasm for them from!

will try this cake tonight...so excited..since this is the first time i will make the cake for my daughter since we know that she's allergic with egg,nut,soya,milk..hope she will like it..thanks for the recipe..:-)

I think I went wrong somewhere with this one  :D
I followed directions and split into two ring tins. However the first one broke in half as I tried to remove it from the pan, 10 mins after cooling from oven. So the 2nd cake I left for 2 hours, but the same thing happened!! Very very oily. I might try again another day with less oil and see how it goes!

Did you line your tin Julia?  That might help remove it in one piece.  I just sit the ring pan onto the baking paper, draw a circle around the bottom, cut the marked circle out, fold it in halves then half again then cut the peak off in an arch which will turn into a circle when you open the paper.  Do it a small bit at a time until your circle is large enough to fit over the hump.

Thanks for the link CC. Unfortunately I also have to go nut free as one of the other guest is allergic to nuts. Hence I have looked at quirky cooking's site and she uses a lot of nuts in her recipes. Whilst there are recipes for dairy and nut free, my concern is more about taste. I have made the ILB chocolate cake a few times now and know from experience that it is delicious likewise for the Creamy Vanilla Frosting. Am very hesitant to try another DF and NF recipe only to have it taste very or worse less than ordinary.

Made this cake over the weekend for my in-law's anniversary and they loved it :)
Hubby was surprised that it was an eggless cake...

But just a small query, it was a tad little dry, not sure what I can do to make it a little more moist, any suggestions for next time?

I was wondering if anyone has put less sugar in this cake. I would like to try it but nearly 500gms of sugar.
