Yesterday I finally made a dish from the book Chookie bought recently (A bird in the hand), called Puerto Rican chicken & rice.  I found a recipe on line to make my own achiote paste to use in it (instead of buying it) which made more than was needed.  I've frozen the rest in a 1 tbs iceblock tray for future use.
The uncooked rice gets added to the pot and is cooked at the same time so no need to cook that separately.

My son is visiting for a few days and both he and DH really enjoyed it, will make again.

Julie, thanks for posting a recipe from that book. Is it very spicy( hot)?

I have made Chicken, leeks and apples and cider. What was left over I added button mushrooms and made chicken cottage pies.  Very nice.

Cookie, my DH is not a lover of anything too hot or spicy so I reduce the content of chillies etc and did so in this recipe.  Turned out to be the right heat for him in this instance.  ;D

Today I made them salmon fillets wrapped in prosciutto; pan fried to get the salmon golden and crispy then finished off in my little oven.  Served on a bed of mash and wilted spinach and a little cob of corn.  Topped with grilled asparagus and a dizzle of holandaise.  One of my DH's favourites.  :D

Visitors for Dinner. Didn't know until 3 pm. Made a pasta bake from Bol sauce from freezer, 3 minute pasta, mushrooms, Zuchinni and silverbeet. All under Awesome cheese sauce.Sprinkled with a mixture of Parmasen and Japanese bread crumbs. Paw Paw for pud.
Baked 1 minute bread which contains 100 g of mixed grains.
Made Nay Nay scones in TMX , after cheese sauce.  Just roughly scraped out the sauce.



Bread suffered from a rat attack.  There is nothing nicer than a bit of crust with salty butter and home made Citrus Marmalade.
