In today's SMH goodfood section there was this article with plenty of great sounding lunchbox suggestions . . Non-TMX but I'm sure many of them could be easily converted . . .

In one of my more senior than usual senior moments I've allowed some rice to boil dry and burn in my most treasured Staub (black interior)  I'm worried that if I start scrubbing it I'll ruin the finish . .I've soaked it but it's really stubborn.  I usually use bicarb (add to boiling water in the saucepan) and then scrub when a pot is burned - and it usually works.  Just scared to do that in this beautiful pot.

If anyone has any suggestions/recommendations I'd be very grateful!!

Main Dishes / Beef Stroganoff from Chelsea (Thermie Groupie)
« on: July 04, 2013, 09:13:49 am »
This is the recipe from Chelsea (Thermie Groupie) that was on her blog several years ago. Chelsea and Mods: I hope it's acceptable for me to take the liberty of posting it here.  It was such a popular dish  and so often pronounced preferable to other available recipes of the same name that I thought a lot of newer members might like to try it . . . .  :D

Beef Stroganoff

1 onion peeled and halved
2 garlic cloves peeled
100g bacon rashers chopped into chunky strips
30g butter
500g diced rump steak
250g Swiss brown mushrooms sliced (strictly no button mushrooms allowed)
2 tbsp tomato paste
100g white or red wine (I prefer red)
50g water
1 tbsp TMX vegetable stock concentrate
2-3 tbsp cornflour
1 tsp Dijon mustard
2 tbsp homemade Worcestershire sauce
150g sour cream
1 tbsp paprika
1/4 tsp cayenne pepper (optional)
pinch dried thyme
1 tsp organic dulse flakes or Himalayan salt
fresh chopped parsley to garnish

Drop garlic onto blades running at speed 7.

Add onion and chop at speed 5 for 2 seconds. Scrape down sides.

Add butter, bacon and cook for 3 minutes at 100 degrees on reverse speed 1.

Add remaining ingredients, except parsley, and cook for 20 minutes at 100 degrees on reverse soft speed.

Garnish with parsley and serve with mashed potatoes or fettuccine.

members' comments

TamG - it is really delicious.  I have made it quite a few times now.

Ekusumo - it was so easy and so tasty. Love love it. Thank you!

cookie - it was lovely. I only made a half quantity for the 3 of us. It will definitely be made many more times.

aussegal7 - We have tried many strog recipes and we haven't really like them until now, this is amazing! Thank you so much for sharing.
I used pizza sauce instead of tomato paste as that's all we had and also had no mushrooms but it was divine! Have just shared the recipe with all my thermie friends :-)

JD - I have to agree with everyone, it is delicious. Thanks Chelsea, with all the different flavours added to this recipe (I left out the cayenne and used a fresh sprig of thyme), it had to taste good.

CP - love it!

CC - We love it too.

maddy - it's equally delicious with chicken.  I don't use the Cayenne either Judy but use 3 Tblsp. Worcester Sauce.
Often I have to cook the meat (beef) an extra 10 - 15 mins. It's still a favourite here.

vmc513 - Delicious, family really enjoyed the meal, feed 6 adults.

peterseaford - I am just a learner but cooked this recipe today - thank you - it is beautiful and amazed that it cooked in just 20 minutes.

Chit Chat / The FRENCH RULES FOR FEEDING CHILDREN
« on: July 02, 2013, 09:59:04 pm »
This was passed on from Lunchboxdoctor through QuirkyCooking's facebook page.

I just love this . . probably should be on Page 1 of every baby and child raising piece of advice!! ;D

https://www.facebook.com/lunchboxdoctor?ref=stream

and I'll quote from the link for non-facebookers

The French Rules for Feeding Children include:

1. Not labelling your child as a fussy eater - the French maintain that taste is a skill that must be taught, like reading

2. Asking your children to try everything even when they don't like it - children need to taste a new food 7-12 times before they accept it

3. Introducing new foods to children before they actually taste them, allowing them to touch, smell and select foods for themselves - often "I don't like that food" means "I don't know it"

4. Talking less about health and more about good tastes - better to say "look, it's really yummy" than to point out how much iron it has in it

5. Sticking to a routine around meals and limit snacks to one or at most two per day

6. Don't eat the same dish more than once a week

7. Meals are times when children should have your undivided attention - misbehaviour at the table is often just attention seeking

8. Take your time when cooking and eating and don't serve overly large portions

Great article by Karen Le Billon, author of 'French Children Eat Everything'. See link in comments.
