I managed to curdle the creamy vanilla frosting. I added raspberry curd to the icing which made it taste yummy, but it looked terrible...

At what point did you add the curd E.S.?......I add runny jam after the butter/sugar  has been whipped.....if you did the same, I'm not sure why that happened  :-\

Madly,

I followed your method, but I was trying to do too many things at once. The fault was with the cook, not the recipe. I didn't scrape down the bowl after I added the cooked milk mixture. I refrigerated it for the 15 minutes, and when I took it out of the fridge, I noticed that it hadn't incorporated properly, and that the butter mixture was stuck down the sides of the bowl. When I tried to mix it in again, it curdled.

I was not happy with the cake itself. I fell in love with the idea of a lemon layer cake with raspberry filling, and I tried to convert a white cake recipe, but it just didn't rise like it should have. I am still getting used to my Thermo Chef, and I should have chosen a different cake recipe. The raspberry curd worked well, and the icing still tasted nice. I am just dissatisfied as I have been waiting for an opportunity to use my new Wilton 1M nozzle and the icing curdled, ruining the look of the cake.

 I will just have to try again.
