Lellyj, that's exactly how my choc chip hot cross buns looked after their first rise.  If only I could have made them all such a lovely round shape from that point  :-))

Love it. The TMX can now shape your buns for you if you let them rise enough. :P

I put the second batch into a normal size muffin pan and they still rose up a lot. Think if I do them again I'll put less egg in the mix. Still, very light and fluffy and should reheat well for the hordes tomorrow ( was expecting 12, but might be more 😳).

Couldn't face posting a photo of the mini meat pies...  A few had a fight with the pan and stuck despite oiling the pans. Never mind, everyone serves mini pies in cupcake papers these days don't they?  ( no one will see the mangled bottoms).

On a brighter note, my eclairs were the best I've ever made 😊.

Pleased to read that you did have something turn out the way you expected, Bonsai!!

Today I made a spelt loaf and played with the recipe a bit. It was very light and rose above the tin. As I went to put it in the oven I had to put it back down on the bench to move an oven rack and the top deflated!

But, worse, I took it out of the tin too early and put it back in the oven to crisp and it sunk through the oven racks.

A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.
