Quick Christmas Fudge

395g can sweetened condensed milk
100grams brown sugar
2 tbsp glucose syrup
125g butter, chopped
180g dark chocolate, chopped
1/3 cup dried cranberries
1/3 cup currants
1/3 cup raisins
1/2 cup dry roasted hazelnuts
* substitute 1/2 cup bottled fruit mince for currants/raisins

Place condensed milk, sugar, syrup and butter in Bowl. Cook 90 speed 6 for 10 mins or until mixture is glossy and sugar has dissolved.

Increase heat to 100, speed 2-4 for about 15 minutes until thickened or preferably mix comes away from the sides.  It may take a while

Slowly add chocolate, hazelnuts and fruit until combined and chocolate melted.

 Spoon into a 20cm square cake pan greased and lined with baking paper. Smooth top. Set aside for 30 mins. Cover with glad wrap and refrigerate for 6 hours til firm. Cut into 2cm squares to make 64 pieces.

(I made mine with Just almonds, hazelnuts, and pecans, you can probably put what every fruit and nuts into it that you like)

made this with Apricots and cinnamon sprinkled on the top. It was very yummy!

Next time i will be warming the milk to encourage it to rise quicker. I think that may be the reason it takes so long!

Made this last night with dried apricots and cinnamon sprinkled on the top before baking.

It took a long time to rise, i think the cold milk was what slowed it down. Next time i will be warming the milk up before adding it to thermie!

Heres my first conversion

Hazelnut biscotti

175grams room temperature butter
180grams white sugar
2 eggs
1 1/2 teaspoons vanilla extract
2 1/2 cups plain flour (sorry forgot to take note of how many grams this was)
1 teaspoon ground cinnamon
3/4 teaspoon baking powder
1/2 teaspoon salt
100grams hazelnuts

Preheat oven to 180

1.Cream butter, sugar, eggs and vanilla together, speed 5-6 for 3 mintues or until creamy

2.sift flour, cinnamon, baking powder and salt into thermi beat speed 5-6 for about 3 minutes or until well combined, you  may need to open lid to scrap down sides a couple of times.

3.Once combine add hazelnut, combine on reverse speed 4.

4.Shape dough into two equal logs approximately 25cms long. Place logs on baking sheet, and flatten out to about 1/2 inch thickness.

5.Bake for about 30 minutes in preheated oven, or until edges are golden and the center is firm. Remove from oven to cool on the pans. When loaves are cool enough to handle, use a serrated knife to slice the loaves diagonally into 1/2 inch thick slices.

6.Return the slices to the baking sheet. Bake for an additional 10 minutes, turning over once. Cool completely, and store in an airtight container at room temperature.

i found these spread out when cooking so you may want to put each log on two trays, but htey will fit on one. They are absolutely delicious, next time i may add choc chips.

i ended up putting a drop of red food colouring in before whipping it. It set beautifully. My kids think they are in heaven. it made a huge amount of marshmallow, more than i could fit in the pan so i placed the rest in moulds.

i made this on the weekend, but used raspberries instead. i didnt quite have 500 grams so threw in a tin of passionfruit.

i was glad i was watching it cooking because it started overflowing, i turned the speed right down until it went down and then back up again. had to do that a few times.

Its a really really yummy jam. i had 4 medium size jars!

i made this last night. It was delicious but found that the 6 seconds chopping the cabbage etc produced a mash.

The first lot i threw out, it looked gross. so with the second lot, I chopped the cabbage and apple for 4seconds switched to reverse added the cream, sultana's and salt. It was still a little mashed but much better than the first one
