halved the recipe (as only wanted afew for ds for dinner), had left over roast spuds, so popped them in with a little milk to make the binding.

We love bubble and squeak in our house as well, the only problem is there is rarely any left overs for us as there is so many to feed. I would need to deliberately per cook the veggies especially to make this.

I normally cook the veg up especially for these also. There are only four of us but we are good veg eaters.  ;D

I cooked these yesterday with leftovers from corned beef and vegies. I did everything as the recipe suggested but I also included the leftover corned beef (~3/4 cup). I blitzed in the thermie a couple of seconds to break down the meat and get an even consistency. DD's had them for snacks after school and declared them YUM! The more I learn and read the more value I am getting from my Thermie - in twelve months we have got the value back over and over... nothing wasted in this household anymore.  :D

Corned beef would be a yummy addition.  These are a great way to use up left-overs.  :)

I haven't tried it Halex.  Not sure how it would go.  I made them on the weekend but didn't let my vegies cool enough.  It was hopeless trying to flip them and I learnt my lesson.  Patience!!!

Next time I am going to bake, see how it goes. Just thought it woukd save on calories & I can onky get 2 at a time in my fry pan.  Will report back.
