I'm not sure an Aussie should be posting this recipe, but this is my version (adapted from the Kraft Australia website). ;) ;D

Name of Recipe: Bubble and Squeak

Number of People: 4

Ingredients:

2 spring onions - trimmed and quartered
50g parmesan - cubed
50g tasty cheese - cubed
2-3 cups of cooked veg - cooled (see notes below)
2 eggs
70g spelt flour (white or wholegrain) or you use plain or wholemeal flour for this
1 tsp baking powder
cracked pepper to taste
oil for frying

Preparation:

Place spring onions, parmesan and tasty cheese into TMX bowl and grate for 4-5 seconds on speed 8.

Add remaining ingredients and mix on reverse speed 3 for 20 seconds.

Heat oil in fry pan on moderate heat. Add tablespoons of mixture and cook for several minutes before carefully turning over. Don't overload your fry pan as they can be difficult to turn. The tip for flipping them easily is to keep them quite small.

Tips/Hints:

You need to have some mashed potato in your vegetable mix as it acts as the "glue" in these fritters. I like to use left-over potato/sweet potato mash for about half of the vegetable mix. The other half is usually a mix of steamed carrot, beans, peas, pumpkin, celery, corn etc.

If you don't have any left-over cooked vegetables, you can easily cook some up in the TMX before starting this recipe. Place 500g of water in the TMX bowl, 500g of peeled cubed potato and sweet potato in the rice basket and an assortment of chopped vegetables in the varoma dish (you could chop these in the TMX). Program 20-25 minutes at varoma temperature speed 2 depending on the potatoes used. When the time is up tip out the water and insert the butterfly into the bowl. Tip the potatoes into the bowl, add a little butter and milk and mix for 10 seconds on speed 3. Remove the butterfly, tip in the other steamed vegies and mix on reverse speed 3 for a further 10 seconds. Set aside to cool before starting the above recipe.

MrsKK - I cooked these yesterday with leftovers from corned beef and vegies. I did everything as the recipe suggested but I also included the leftover corned beef (~3/4 cup). I blitzed in the thermie a couple of seconds to break down the meat and get an even consistency.
Hally - has cooked the mixture with the addition of corned beef as a slice in the oven.
kmw -  Made using left over roasted veggies.  Used rice flour instead for DH.  Froze what we didn't eat for DH lunch.

Bubble and Sqeak, what a lovely old tasty recipe.  As a kid I could never understand why vegetables tasted lovely like this and yuk when on your dinner plate of an evening.

My brother and I would swap our vegies and manage to clean up our plate. With eggs he would eat the whites and I would eat the yolks. When we were eating together a couple of years ago we did the same, his wife nearly had a fit. ???

My kids do the same - especially with the eggs. I turn a blind eye as it saves the whining and the meal gets eaten with as you say clean plates  ;D ;D

We had heaps of vegies left over the other day (people trying to reduce their portion size) so I turned them into bubble and squeak, they were lovely.

I made this during the week from left over veggies from a roast dinner, i had  to make some mash potatoes so I did 1/2 potato and 1/2 sweet potato. The taste was superb, I did have a little problem  with flipping the biubble and squeak over, we all loved this and it reminded me of days with mum cooking bubble and squeak but I am sure mums was all cabbage, anything to get the cabbage into kids.Lol  now I do the same, help I am turning into my mother.......

I must admit yet  again mine looked nothing like the photos :)

Wow I remember this from when I was a kid. Think I'll take a trip down memory lane and make this during the week with leftover veges.

halved the recipe (as only wanted afew for ds for dinner), had left over roast spuds, so popped them in with a little milk to make the binding.

We love bubble and squeak in our house as well, the only problem is there is rarely any left overs for us as there is so many to feed. I would need to deliberately per cook the veggies especially to make this.

The more I learn and read the more value I am getting from my Thermie - in twelve months we have got the value back over and over... nothing wasted in this household anymore.  :D

I haven't tried it Halex.  Not sure how it would go.  I made them on the weekend but didn't let my vegies cool enough.  It was hopeless trying to flip them and I learnt my lesson.  Patience!!!

Next time I am going to bake, see how it goes. Just thought it woukd save on calories & I can onky get 2 at a time in my fry pan.  Will report back.

I had a heap of vegies over from bangers & mash last night so have made this recipe adding some caramelised onion as well.  I don't need them at the moment though so I am going to freeze them in little mounds.  I hope it will be OK to do this otherwise the vegies would get thrown out as we are eating out a couple of days next week and I have spag bol for GS on Tuesday in the freezer.  No cooking for me until later in the week.  Will report back once I have thawed and cooked some of them.

Made these tonight as I had plenty of left over roasted veggies from yesterdays BBQ/Webber dinner we did for DH birthday.  Used rice flour instead for DH.  Simple, quick and easy and everyone loved them.  Froze what we didn't eat for DH lunch.
