Thai Chicken Patties

Name of Recipe: Thai Chicken Patties

Number of People: Makes 16 Patties

Ingredients:

400g      Chicken
¾          Onion
2           Cloves Garlic
¼          Red Capsicum
1           Zucchini small
1 tbsp    Soy Sauce
1           Egg
2 tbsp    Coriander
1 tbsp    Lemon juice
1 cup     Breadcrumbs
             Salt & pepper (to taste)
             Sweet Chilli sauce to serve

Preparation:

•   Preheat oven to mod hot 200 deg fan forced
•   Mince chicken in TM bowl & set aside
•   Add onion, garlic & coriander to TM bowl & dice for 5-10 secs on speed 7
•   Add capsicum, zucchini & chop for 5-10 secs on speed 4
•   Add chicken back to TM bowl, add egg soy sauce & breadcrumbs, lemon jucie, salt & pepper & mix for 10-20 secs  on             reverse soft speed 2 (or until combined)
•   Spoon mixture & form flat pattie the size of an apple.
•   Place on baking tray lined with baking paper
•   Bake in oven for 20 – 25 mins until cooked. Turn halfway mark

Serve with sweet chilli sauce (if liked)

Tips/Hints:

I am very new to TM cooking so any tips are welcome in adapting this recipe that I love & so do my kids. I made this tonight & was a winner in my opinion!! Very easy & quick.

sue h - Another thermomix hit. We had friends over for lunch, they were still warm and perfect for kids and adults. The recipe is very generous so we had them for lunch again today with a platter of assorted fruit, green salad and left over capsicum dip (TM of course). I finally used all my store bought sweet chilli sauce too so I can't wait to make my own.

Mmmmm.  These sound so good.  They are definately going on my "to do" list.  I have had chicken with sweet chilli sauce before in a restaurant as an appy and loved it.  I'm sure these will be much nicer.
