Chia, Date & Walnut Slice
Converted from this month's Healthy Food Guide magazine :D
Ingredients:
150g rolled oats
80g walnuts
40g coconut (shredded or desiccated)
40g chia seeds
1 tsp cinnamon
1-2 tbsp cocoa
2 tsp vanilla
425g pitted dates
few tsp cold water
icing sugar, to serve, if desired
Method:
Chuck everything except water and icing sugar in TMX bowl. Whizz on speed 5 until mixture becomes fine, then add little dashes of cold water through lid until it comes together. Press into a greased dish (I used a 23cm pie dish) and refrigerate. When ready to serve, slice and dust with icing sugar. Can be kept, covered, in the fridge for up to 2 weeks :D

Cookie - I was keen to try this recipe and I really liked it. DH wasn't too keen but he likes things sweeter. I melted a small chocolate and sort of drizzled it over it. A nice healthy slice or truffle. I added milk instead of water to bring it all together. The chia seeds are quite crunchy in it. Very tasty.
Tam - Just made this as I had some roasted almonds blitzed that I needed used. I used them instead of the walnuts. I decided to use melt some chocolate to put on top (instead of icing sugar). Will look forward to one after dinner with a cuppa....or 2. I added only 30gms of chia seeds as the taste can be quite strong. I could really taste them in the first 1 or 2 bites but then all I could think of was how yummy it was.
kmw - is very tasty. It is very hard to stop at one. Thumbs up from hubby & one for his lunch box when back at work. Thanks for the recipe.

I'm making a Raw Caramel Slice at the moment and I don't think it's going to work out. I got it from the Tick of Yum (http://tickofyum.webs.com/apps/blog/show/25709320-raw-caramel-slice) blog. There was no indication of the size of the tin that was to be used. There wasn't enough base for a regular slice tin, so I had to transfer it to a square cake tin. Then there wasn't enough caramel, so I made another batch. It's supposed to set in the fridge so you can put the chocolate topping on, but it's still runny. :( I noticed she used cacao instead of lucuma, but lucuma's a sweetener, so I swapped it out for agave syrup.
I think it must have to be served frozen. That's how she first tasted it. I can't see the point.

I have all the ingredients for this in a plastic zip lock bag. We usually have a "Biggest Morning Tea" up here and I will make it for that.

Each year I end up taking something yuk to the morning tea, so this year. I'm ready. I've also packed a couple of homemade prepared cake mixes. We'll cook them in the Easi Cook.

I plan to make this today. Amy does it have to have chocolate on it? I guess I could always buy some and eat what I don't use. ;)

Cookie, it certainly doesn't have to have chocolate on it. The original recipe doesn't. But I think it would go really nicely with the nuts in the slice, and dark chocolate is good for you anyway, right? :D

Sadly you are right Amy. Although he tucked into the leftovers today. Perhaps he had too much sweet stuff yesterday.
I didn't have a pretty dish to put the last piece on for the photo, so I put it on top of the bread machine loaf.

Yes, I found it hard too Chookie, however I'd just eaten a rather large pizza so I guess my will power didn't have to work too hard ;D

I'm really excited as I'm on a low iodine diet as part of my treatment which makes so many foods off limits, however, I can eat everything in the list of ingredients! Yay! I am definitely going to try this today - I wonder if it would work as bliss balls. I'll see how the mixture feels... watch this space! Great recipe - looks healthy and delicious!

I did a couple of them as bliss balls before I popped them into my mouth. I loved the crunch of the chia. I didn't tell anyone what they had in them. After a few more DH decided that were ok after all.
