Smoked Salmon Potato Salad with Peas and Zucchini
Serves 4
Ingredients
1Kg small potatoes, halved
1 cup frozen peas
2 zucchini
2 x 200g packets smoked salmon
½ red onion, finely chopped
1/3 cup chopped fresh chives
½ cup chopped, fresh parsley
salt and pepper
½ cup good mayonnaise
½ cup Greek yoghurt
Preparation
Place potatoes into Varoma, 500ml water into the bowl and cook Varoma, speed 4 for 20 minutes. Add peas in the last 5 minutes.
If not cooked add a little more time.
Use a vegetable peeler to slice zucchini lengthways into long, thin ribbons.
Place potatoes and peas, smoked salmon, torn into strips, onion, chives, and parsley into serving bowl.
Mix mayonnaise and yoghurt and fold through salad.

This recipe is adapted for thermomix from one in the New Idea. It is very easy and tasty.

Nice salad cookie, I'd have to sub the smoked salmon for canned chunks or even smoked chicken to suit my taste.

It would be nice with cold chicken left overs Judy. In fact any sort of protein, even boiled eggs.

I was going to add some leftover chicken to fried rice for tea tonight but decided to use it for this recipe instead cookie.
I just used ordinary potatoes cut into 1/4's and pan fried the zucchini ribbons for a short time (have never eaten raw zucchini), warmed up the chicken and did everything else as per recipe. A warm salad, something I don't remember having before.
Verdict - I loved it cookie ;D Such a versatile recipe too, use whatever you like virtually.

Thanks. I wasn't too sure how DH would go with it but he loved it too. It's sort of something you could do from leftovers.

Don't thin my DH would like this but I know I would so will put it on the menu for Christmas as it is something different to the usual salads. Thanks Cookie.

Judy , you must try the uncooked Zuchinni. Like you I didn't think I would like it , but had some in Turkey and loved it. They mix it with carrot and salt it , then rinse and dry, before serving with yoghurt. Could also serve with hummus.

Actually you don't really remember it is uncooked zucchini when you are eating it. ;)
