I've always been taught that you should not put stainless steel anywhere near the cabbage when crushing it. I use a knife to chop it and hands to massage and crush it with salt and whey from yoghurt. I also add fennel seeds. Yum!

Nikalene is the new Tenina for me. I was so disappointed with Tenina's last book. I'm very much over raw desserts and that's all that's in the book. I have Nikalene's book and e-book, but haven't got around to making anything from it yet. Thanks for all the reviews!

I'm sure there are some nice dishes in the book. Tenina is a master of flavour. There's a lot of Mexican, but not much Indian, which is a shame as some of the Indian cuisine is entirely vegetarian and super delicious. I'm not entirely sure where one can find such ingredients as chipotle chilli in adobo sauce.

I'm not overly thrilled with this book. I'm not a fan of vegan or raw and there's a lot of both. There's also a few recipes from Tenina's other books which I find annoying because I have all Tenina's books. There's not a huge amount I'm that keen to try.

DH had two serves and he's not a fan of quiche type dishes. So that's really saying something. I told him there was some Frittata for tea if he was hungry (I'm not and no one else is home). After finding out what it was, he was a bit dubious. As he ate it, he quickly changed his tune and decided this was pretty good!

This is a little time consuming to prepare, but it's definitely worth it. Delicious! I only had 150g feta and recipe called for 200, so I added some home made all purpose seasoning to the vegies as they were steaming. I used spinach from my garden and pre-chopped it including stems. I also added a good sprinkling of ground black pepper to the mixture. It was better for it, I think. I think I'd set aside some of the grated cheddar to put on top next time. DD, you're obviously back in the city, then!
I haven't been on here for a while, just so busy. I made jelly cakes today and looked after grandson no 1 who's nearly 18 months old and into everything. I think he's going to be a cook as he has to be right there when I'm doing anything in the kitchen. I made real jelly for the jelly cakes, using my own recipe. I'm still working on it, so will post on my blog when I have it absolutely perfect. I put cream in them and froze them as one of the ladies in our town does this and they defrost perfectly.

I decided not to make two cakes, but used a small baking dish to make one. Bad move, as it sunk in the middle. Next time, I'd just halve the recipe. I don't really understand why the recipe is for two cakes, anyway!
This was quite nice. I added cinnamon to both apples and batter. The thing I found, though, is that the chip and the book have different methods for making the batter. The chip needed softened butter, while the book said melt the butter. I went with the book and it was easier.
I served with cream, but tonight will make a custard as the apples on top are a little dry.
