Oohh, that's sounds like it would be right up my vegan alley. Would you be able to point to the recipe Kat?  :)

The other night we had a chicken breast cut into thin slices, with sun dried tomatoes, feta, pesto and spinach on it. This was then encased in pastry. It was supposed to be puff, but to save calories I made short crust.
I managed to grab a photo of the last scraggy piece today. I will post the recipe, it's easy and tasty. Also makes 1 chicken breast go a long way.

Richard has man flu, so tonight I made chicken & corn chowder. It was a slow cooker recipe, but I made it in my pressure cooker in a lot less time. It was really nice and plenty leftover for tomorrow.

DH made a risotto with ginger, garlic, galangal, kafir lime leaves and lemongrass and half a habanero chili with some prawns, served with a stirfry of veges and a few bits of thinly cut belly pork. Really yum

Made a potato and Jerusalem Artichoke mash in TMX. Nice to use something from the garden.
Also reheated Cauliflower soup in TMX and when hot added mustard greens and zapped on 10 for a few seconds.  Lovely.
