Looks amazing as always Chookie.
Well after cooking Indian food to bring to Mandurah yesterday I left it in the fridge so last night was a cooked chook from Coles with a garden salad, beetroot and corn and tonight asparagus, rocket and cherry tomato  salad with pasta arrabiata.. I remembered the food halfway down the freeway

This was our dinner.



Normally I would never buy a stuffed chicken but Cole's  was practically giving this Macro "organic " bird away. Normally I would give the stuffing a miss and feed it gradually to the dog but I spotted "bits" in it And on closer inspection I found BACON. And a mystery while crunchy bit which could have been unripe pears but no apricot as advertised. Not too fake a flavour so decided to chance it. Not good but not bad. At least it held together and was not slop. The chicken I seasoned with home dried chilli, pepper with a dash of truffle salt.

The salad is my TM made chilli, mango and lime dressing over TM made ricotta, and greens from my garden which have survived for a few months. Have no idea what some are but I was assured they are edible. The rest came from my fridge and edamame from the freezer..

My first Mango of the season was used plus a whole long red chilli from a friend. Lime from the guy who mows my lawn. He steals them from others.

Absolutely delicious and the chook  cooked on the BBQ while I floated in the pool reading my Kindle.  Summer is here.
