I cooked Chookie's mango fluff and Julio's Hellenic Salad as part of a dinner  party repertoire- both were extremely well received. Thanks for 2 delicious recipes.

Chinese chicken salad tonight and I'll say the skinnymixers roast pork belly and caramelized apple sauce was delicious it was literally inhaled by everyone doesn't happen too often in my house   I did have to use 2 pieces of pork belly one was 900gms the other 600gms still cooked exactly the same times and perfect crackling too, I dried it with the hairdryer just to make sure it worked

Another use for the hair dryer.

We had Satay Chicken Noodle Salad from Recipe Tin Eats last night. It seemed to take a while to prepare but next time I will do most of it earlier. I made thin noodles with the Pasta Maker. It was really delicious. I chopped the carrot in the thermomix and next time I will chop the cabbages in the thermomix too. It was really tasty and we have lots of leftovers.

Skinnymixers Bhuna Gosht and Indian Cauliflower Rice. The children wouldn't try it and have named it "bin its gross".  Never mind DH and I enjoyed it.

Tonight we had Fafallina's zucchini pasta with the last of the Christmas ham and last night we had Kimmyh's quiche with ham and cherry tomatoes. I also made skinnymixers butter chicken on Friday night. It was delicious, but we seemed to have lots of sauce. We had enough left over for the next night with extra chicken added.
We had mango Icecream for dessert as I managed to buy some really fragrant, ripe mangoes for 50c each.

I was going to make a chicken and roasted capsicum dish but needed a small amount of mayonnaise to make the sauce and I had run out. So I marinated the chicken as strips in some sherry and soy, then sliced up all the Vegies I could find and we had a stir fry. It was delicious.

I made Szechuan Chicken from  QFITT for DH and I had a MB meal (herbed ricotta with roast pumpkin open sandwich) which I found surprisingly filling.  Was served on soudough bread, will make again.  :)
