Sunday was smoked chicken & avocado fettuccine



And last night was Morrocan couscous and thyme/garlic chicken, wrapped in prosciutto

Gorgeous Maddy.

I made my friends ragu alla bolognese with homemade fettuccine. The sauce was ok, next time I would add garlic and a bayleaf and celery, which I was instructed not to do as it's not authentically Italian. Will be interested to see what DH thinks of it.
What I did take away from the recipe - dicing the onion and carrot to mince size, certainly put my knife skills to the test and adding the half cup of red wine and reducing down gives a lovely rich flavour.

What I was really pleased with was the pasta. Uni gave me some tips last time I saw her and I floured everything really well.

I didn't have much time tonight, so I thought I'd try one of Jamie's 15 minute meals. I made the Chilli con carne meatballs. I made the sauce in the thermie, and steamed the burgul over the sauce. I cooked the sauce for 15 min and cooked the meatballs in a frypan. DD didn't really like the burgul, but ate it, but DS wouldn't eat it at all. The meatballs were a little dry as the beef was really lean. The sauce was really nice. It only took 15 min to cook, but about 10 min to get all the ingredients out. All in all, about 30 minutes from go to whoa.

Tonight was meant to be Hally's lamb/feta burgers....but after defrosting mince...it just didn't look right  :-\.....so will make another day with fresh mince.

made chorizo frittata instead

My GD came for lunch today and asked me to make penne arrabiata so we had the leftovers for tea tonight with the addition of some cooked bacon and mushrooms for DH.
Was very tasty  :)

We had Old El Paso chicken enchilladas, the reason I am mentioning this, they were surprisingly good. Quick & easy & much cheaper than a take away.

I woud buy them again for a no fuss meal.

I have no idea what we are having for dinner tonight though. Must go and look in the freezer ;)

We like them too H. But JulieO's sauce tastes almost the same just not as quick.
Chelsea's beef stronganoff with fettuccine tonight.
