Bread / Pizza Dough Proving Time

Hi Everyone.  I wonder if you can give me some tips.   I have started making pizza dough and find it very rewarding but I am very confused about proving time.

My Pizza Bianca recipe says to Prove for 10 minutes but the pizza dough in the EDC says to let rise for total of 45 minutes and then there is a clip on youtube where they say to let it rise for 90 minutes.

Why the different amounts of time to let the dough rise?

What I am looking for is a nice thin crispy base but I thought that would depend on how thin I roll the dough out.

Some tips would be very much appreciated.

Hi Everyone.  Is there a setting somewhere that I can change so that I know if people have replied to my thread or another thread I have commented on.

She was very apologetic and thanked me for understanding.  What a shame - I would have ordered immediately at that price.

I just want to let you all know something.   I asked the new lady I have coming to do a demo for me how much a new bowl and jug set would be and she emailed me that it would be be $395 plus delivery.  In the meantime I emailed Thermomix direct.   I have just received a reply from them telling me they would charge me $195 plus $7 freight.   Big difference!!!!!!!!!!!!!!!!!!!!!

She has included an order form with her reply so I am going to order from Thermomix Direct.   I think it definitely pays to deal with the company directly.

Does anyone know how much a new jug is.  I wouldnt mind a second jug and I heard somewhere but cant remember where that there was a way of getting one half price with a demo - or is that just a special promotion every now and then  :)

I would really love a copy of the recipe community cookbook.   I hope it becomes available for us to buy as I am sure there are many of us who would eagerly buy it.

I have made this cake several times also and it definitely needs the 20 x 30 tin not the square cake tin.   I found the square cake tin made the cake too high and therefore it didnt cook properly but in the oblong tin it was perfect.   

Also I have always wondered are the recipes in the TM Cookbooks written for fanforced ovens or should be reduce by 10 degrees if we are using fanforced???

The first thing I made was bread.  I had never made bread at home before because I just couldnt be bothered with all that kneading etc.   But I have never seen a loaf of bread made so quickly in my life.  About 2 minutes after it came out of the oven my husband ate about half the loaf and then later on that night when he was hungry again I whipped up the Lemon Custard in a matter of minutes and he asked how much custard powder was in it LOL........  he didnt believe me when I said it was made from scratch.

Hi there.  When I had my first demonstration my friends came over and looked as bored as anything and I think they wondered what they were doing wasting their time looking at a kitchen applicance - but after about 10 minutes they were very very impressed and understood what all the fuss was about.   It is alot of money but it should last for so many years that it pays for itself.  And also when you consider that a Kitchenaid mixer is about $800 it doesnt seem so much.  Enjoy!!!

Welcome David.  I am from Mornington Peninsula.  Have a good look around the forums here and you will find heaps of recipes that interest you.  The cook books are great but some of the recipes posted on here are just divine.  :)
