I made this for the second time today and used chicken thighs instead of breasts.  Took Thermomixer's advice and used less coconut milk (a 270g tin) and cooked the thighs for 30 minutes on temperature 90o.  Found I still needed to thicken the juices though - 2 Tbspns cornflour mixed in a little water.  Used 2 tspns sambal oelek this time - getting a little more adventurous these days with the taste of chilli.

This morning I have cooked Nico's Thai Chilli chicken, Bron's steamed garlic rice and my Goulash soup in preparation for my house guest who arrives just in time for tea tonight.

Oh dear MrSpock, you do have a problem.  So many men just love their piece of meat which is not covered in sauce and vegies. Chicken fillets are lovely done in the varoma like a parmigana type thing - would he eat that?  I mainly want to use my TMX for main meals, soups, drinks and easy desserts but there are more recipes out there for cakes, biscuits etc than anything else.  We are gradually building up a lovely selection of mains though - thanks to all our members - so I am a lot happier now than I was in the early days of TMX'ing.  I actually cooked DH a T-bone on the BBQ last night for tea with some leftover mashed potato and a couple of fried eggs as I had been out for lunch with my carers' group of women - all that was left on his plate was the bone!!! He never complains he doesn't get enough of this type of meal though and he is in the mindset these days that everytime I serve him up a meal he asks me if we are reviewing this recipe for the forum ;D ;D ;D Bless him, he never used to comment on what I did before TMX but now gives his opinion of every meal presented to him.

Agpest you won't do it any other way once you have done it in your TMX - whilst it is cooking you can be preparing the eggs or asparagus.  Don't know what everyday cookbook you have but the recipe in mine had to be tweaked before we got it right.
4 egg yolks
130g unsalted butter
juice 1/2 lemon
S & P to taste
Insert butterfly.  Place all ingredients into TM bowl and cook 8 mins 90o speed 3.  DD used cold butter and this time was perfect.

Hi Hannah, that UK cookbook sounds weird.  I have yet to see a Thermomix cookbook that doesn't do everything in the TMX.  Like you, my vegies only seem to cook if I am using the varoma temperature which is sometimes too hot for the dish in the bowl.  I love baf65's all in one dinner idea but if you are cooking a meat casserole in the bottom and want to do vegies up top, you can't have the temperature too high for the casserole (I hate cleaning a bowl with food stuck to it >:( >:()  I often do the casserole then put it in the thermosaver and do the vegies separately. I cut them rather small so they don't take too long. Not all dishes come together as nicely as the all in one meal though. We always have leftover casseroles/stews so that leaves the TMX free just to do the vegies and I zap the meat dish in the microwave. It's all a matter of trial and error really.

What is a thermoserver?
It is a stainless steel, heat retaining dish which keeps things warm (eg rice, mashed potato) whilst you cook a curry or something to go with it. I use it all the time and find it very handy indeed.  You must get one!!!

Good idea Thermomixer - that was the whole problem, having to cook it longer because the vegies were still almost raw.  Should have put them in a lot sooner but like your idea better.

Soups / Moroccan carrot and lentil soup

Name of Recipe:Moroccan Carrot and Lentil Soup
Number of People:serves 4
Ingredients:
1 tblspn olive oil
l onion quartered
l clove garlic
2 tsp Moroccan seasoning
1/2 cup red lentils (90 grams)
600g carrots, peeled and roughly chopped
l litre water
2 tblspns veg stock concentrate
60g crumbled feta or plain yoghurt, to serve
Salt to taste

Preparation:

1) Place the onion and garlic into the TM bowl and blitz 3 seconds on speed 5.

2) Add the oil and saute 5 mins/Varoma temp/speed 1.

3)Add the Moroccan seasoning and the lentils and cook 1 minute/100o/ speed 1.

4) Add the carrots and blitz for 3 seconds/speed 6. Repeat if necessary.

5)  Add the water and the stock concentrate and cook 100o/speed 1/ 30 minutes.

6) When cooked slowly work up to speed 9 and blend for 1 min.

Serve topped with crumbled feta or a dollop of plain yoghurt if preferred.

This recipe was adapted from one published in Take 5 magazine.

JulieO - I made this Judy using my own Moroccan seasoning. Added a umami paste cube also.  I thoroughly enjoyed it as is and next time I'm going to try 500g carrots and 100g sweet potato as sweet potato seems to go well with Moroccan flavours. I blitzed for 1 min/speed 10 to get really smooth and served with a dollop of thick natural yoghurt and a grind of black pepper.

TAT - Wow! This is soup-er! Simple, tasty and cheap! The soup is lovely and thick, and the flavour is spot on, I just needed to add a little salt. I reckon you could use the spice combination from the Moroccan Tomato and Red Lentil Soup in the Everyday Cookbook if you didn't have ready made seasoning to hand.

Thanks ILB.  Yes I have a thermosaver (love it!).  I think the problem was definitely overcooking plus the fact I was trying to be too smart for my boots and convert a recipe I'd read in a magazine earlier in the day.  If I follow proper recipes, I usually do alright. I made my spinach and rice pie again today to take down to DD No. 2 for lunch when vegetarian DD No. 1 arrives from Melbourne on Friday for DH's 60th on Saturday. I managed to convert that one OK but from now on for risotto, will only follow a recipe.

Thanks Chelsea, sounds nice.  My rice stuck to the bottom and burnt on a bit too - wasn't happy about that!  Perhaps the butterfly should be used as the original recipe states.

I used 380g rice ILB and added the vegies after 15 minutes for another 15 minutes but by then the rice was gluggy.  Made far too much for 2 people.  Thinking I might roll some of the leftovers into balls and coat with egg and breadcrumbs and fry but know I will throw most of it away.  Do you use the butterfly or not - the everyday cookbooks says to use it but someone else said not to and I found it just didn't seem to be turning at all.  Funny part was, when I originally did the mushroom one from the book and followed it to a T, DH didn't like it.  Tonights was terribly mushy and he said it was OK - men, can you ever work them out ??? ??? ???  It is not something we have regularly, maybe twice a year so it is not a huge problem.  There are plenty of other lovely things to cook which I prefer anyway.

Today whilst babysitting at DD's place, I used her TMX to make a carrot and lentil soup then when I got home I converted a broccoli & zucchini risotto but it wasn't that successful - rice overcooked and vegies undercooked.  Decided I don't really like risotto anyhow so no wonder this is only the second time I have made it. DH thought it was OK but he doesn't like risotto either. No more risottos for me!
