Title: CP's Mums Pineapple Cheesecake Slice
Post by: CreamPuff63 on September 03, 2012, 05:12:57 am
This is a recipe I wrote down when I left home many years ago.

Ingredients:
85g butter
170g Granita biscuits
440g can crushed pineapple
1 dessertspoon gelatine powder
250g Philedelphia cream cheese
400g condensed milk
85g lemon juice

Preparation:

1.  Melt butter 2.30 mins / Speed 2 / 60o

2.  Add biscuits (breaking up abit as you add them) 3 secs / Speed 6 to combine. Press over base of a slice tin (26 x 16 approx) and refrigerate until set.

3.  Wash bowl. Drain pineapple juice into TM (reserve crushed pineapple for later). Sprinkle gelatine over the juice and not the blades  4:30 mins / 60o / Speed 1. Remove and set aside to cool.

4.  Cream Philly cheese and condensed milk 20 secs / Speed 5. Add lemon juice and cooled gelatin mix 1 min / Speed 5.

5.  Add crushed pineapple  Knead setting / 20 secs. Pour over the top of the set biscuit base and allow to set.

Photos:  later...

Variation:
Can use fruit of choice, and we have enjoyed Mango but pineapple is my favourite.

Trudy - This sounds like one my Mum makes.  She also cuts it into small pieces and freezes it for when she get an unexpected visitor.  Haven't made it for ages so thank you for reminding me.

Zada - Omg! Just tried some, this would be the best slice I've made! Thank you!

Emme - Want to thank you CP for sharing this recipe.   I made this yesterday and it was lovely. Did not have any lemons so used limes. Have been asked to make it again.  Thanks again.

KarenH - Thank you CP - this is delicious! Guess what - the kids don't like this. That means it is ALL for DH and me!!  YAY!!

MF - This is really delicious. It's so good that I had to make another one yesterday for my mum as she loved it so much.
Thanks CP.

Obbie - I made this again on Saturday, and Yum.. My favourite now..

Mab19 - Made this today and it is YUM.  Might add just a tad more gelatine next time as it was a little bit "sloppy"  Will certainly be making it again.

JD - I made this before CC came out to Australia last August but this, along with some lamingtons, never got to see the light of day for my special guest.  I thought I had reviewed it but I obviously forgot to click on 'post'.   The main reason for coming back on here is to say that tonight I had a piece thawed and it was still as good as the day I made it. Very handy to be able to make desserts ahead of time and freeze individual portions for a quick dessert for unexpected visitors.

CP my DD would love this. I think you may have left out a step though, when do you add the pineapple juice mixed with gelatin back in? sorry if I'm just not reading correctly.

Its a lovely cheesecake slice I'm sure he will enjoy it. Really easy too now that its converted. Step 3, you just drain the pineapple juice out of the can straight into the TM jug. Does that read ok?

Sorry CP, but after you ave added and dissolved the gelatin you say to set it aside but I can't see where you add it back, I assume with lemon juice.

Shopping in WW today and pineapple was on special, straight away thought of this recipe and bought 5 tins... Too scared to make it though as I know I won't be able to stop eating it.

This is in my fridge now to take to a picnic tomorrow.
Should I freeze it and then take it with me and let it defrost or would it be ok as is and just put it in the esky?
Don't want a gooey slush  ;)

MF, Trudy said in her posting that this recipe sounds like one her Mum makes and freezes so there's your answer for you.  It might travel better if frozen or slightly frozen.

I love the sound of this but have lots of fresh pineapple to use up. Can someone tell me approx. how much pineapple juice I would need to add to the gelatin. I will then crush some fresh pineapple and get the juice that way.

I made a strawberry version of this during the week to have as dessert with some friends.  I stewed a punnet of strawberries in a little water and then just followed the recipe as normal.  I wasn't sure how much juice is in a can of pineapple so just used half a cup of the cooking liquid.

I sliced it up and put it in the freezer and it thawed out nicely.

Thanks for bringing this to our attention and the conversion; back when cheesecakes first became popular this one and a lemon one seemed to be served at every kitchen tea that was held. The strawberry version sounds great. They would be both good for all the "bring a plates" at the end of the year.

I made this using strawberries and it's really nice. We still prefer the pineapple version but the strawberry is still good. Thanks CP.(http://tapatalk.imageshack.com/v2/15/01/03/f860422754c7502e1e44ed13835fab40.jpg)
