Could be...one thing I was told was when baking, once you have added liquid to SR flour you do not let the mix sit for a long period otherwise all the rise goes out of it... I have never done otherwise so someone may be able to set me straight on this whether its true or not?

I am not sure that I would let a cake mixture (other than a rich fruit cake) sit for any length prior to cooking Kerryn. This works well being zapped in m'wave to warm for serving!!!  :)  :)

Thanks CP63 and Robyn. I decided to cook it early and then left it in the warm oven. Everyone enjoyed it however I found it much too sweet for me.

Made this a few nights ago and it was liked by all. Not too sweet and the sponge texture was lovely.
