They aren't regular microwave ovens, right?

LeeJ they are both regular microwaves and convection microwaves. I just pulled out some Pizza rolls out of my Convection microwave. Love love it.

So you just 'flick a switch', and it changes the way it cooks? lol

I'm trying to decide whether to put 2 normal oven sin my kitchen, or a 900ml oven; and a convection oven in my butlers pantry...

Well not flick a switch, but you have a choice of selecting convection.
The microwave runs like a normal microwave until you press the convection mode, so nice and simple for the kids.
