Quirky Jo posted this on her site recently and it has been getting lots of rave reviews so I thought I'd share the link here and some photos of the version I made. It does not taste like a typical cheesecake but still great nonetheless.

Maybe it can also be posted under the Vegan section mods??

I would recommend extra lime in either the filling or topping part and possibly extra maple syrup in topping.

Cuilidh - I made this last weekend as well - sadly DH didn't like it but that just leaves more for me! A very easy recipe to make for something that looks spectacular when finished.

Persistenttiger - I agree with you regarding the tweaks, but it's very tasty. Was well received by all, even the non-vegans.

I've heard talk of her making a cookbook so will definitely be interested in buying that !!
