Title: Megan's Tomato Passata

This is delicious. It's one that can either be used straight away or canned in jars and kept in the cupboard for up to 6 months.

Megan's Tomato Passata

2kg very ripe tomatoes
good slug or two olive oil
Sea Salt

1 large brown onion
2 cloves garlic
1 Tbsp olive oil
3 bay leaves
handful fresh marjoram, rosemary, oregano, sage (or two tsp dried Italian herbs)
pepper

Preheat oven to 180° C.

Cut core from tomatoes and place in baking dish. Pour over oil and sprinkle with sea salt. Roast for 30 minutes until soft and skin is loose.
Meanwhile, chop onion and garlic in  *: . Add olive oil and sauté on 100°, speed 3 for about 5 or 6 minutes until soft.
Remove tomatoes from oven. Cool slightly and peel away skin. Pour tomatoes and juice into  *:  and add herbs. Cook on Varoma, speed 2 - 3 for 30 minutes, NO mc, or until reduced. Test for seasoning and if necessary.
Pour hot sauce into sterilised jars with popping lids or canning jars and seal. Place in a pot and pour cold water in to come ˝ way up the jars. Bring to boil and boil for 10 minutes.  Leave in pot until cool. Lids will pop down if sealed correctly.
Keeps for 6 months in the cupboard.

Whoopee. I've just been given a heap of tomatoes by a friend, guess what I'm going to make-if I can find the jars. DH keeps nicking them for his olives.

I know a few Italian words as I teach Italian to the Pre-Primary to Year 2 class here. LOVE the language and hope to go to Italy one day!

MJ is this a tomato paste ie to be used if a recipe calls for 2 tablespoons of tomato paste? Or a tomato sauce main base to mix into pasta?

No, not a paste, a sauce. You can make it much richer by adding tomato paste if you want!

Unfortunately, as far as the Italian language goes - So solo delle parole, nessune frasi...

Got the tomatoes in the oven now.  I invested in a new "toy" the other day - a strawberry huller.  It looks like a tiny melon baller.  It is perfect for coring tomatoes as well.  At $4.95, a great little stocking stuffer for cooks.

Have you tried freezing it?  Just seems simpler than sterilising jars, and I've got plenty of suitable freezer containers.

It should freeze fine. I just have more pantry room than freezer room, which is why I chose to can it. I also 'lose' things in the freezer....

I forgot to ask, mine was splattering everywhere and made quite a mess, so I only cooked it for half the time.  Does yours do that?

They usually do - place the basket from inside the TMX upside down over the lid opening and then a clean Chux or similar over that to catch the spatters.

Mine didn't splatter too much. I just turn down the heat a bit and cook a bit longer if that's the case, but I'll do Tmixer's trick next time!

Have made this one today but put it into ziplock bags in 2-cup lots and have frozen for future use.  Will be on the look out now for packs of over- ripe tomatoes out on special instead of just buying tomatoes especially for this recipe like I did.  Thanks meganjane for the recipe.

I have just learned how to make tomato paste - I made this recipe to use up some over-ripe tomatoes, but only had 1kg. So I halved the recipe quantities, but forgot to reduce the cooking time  :P  And at the end of the cooking time, I had thick tomato paste, which could also be used as pizza sauce!  It was so thick that I had to add some hot water just to be able to puree it properly ....  I had been wondering how to make tomato paste - and now I know!   ;D

Some good recipes result from mistakes KJH.  There have been a few discussions on making tomato paste but all recipes are now within other topics so perhaps a moderator could put yours and the only others I could find on the forum under Condiments and Sauces where they will be easier to find.

I have been looking for this recipe for ages since the forum ladies mentioned it at the Peth get together. Finally it has surfaced so I've written it into my book.

I'm so glad to find it and can't wait to make it. I've got some dodgy tomatoes in the fridge as we speak that are looking for a healthy way for disposal. Guess where they're heading???  ;D

Judy your knowledge of the layout of the forum is amazing, you seem to be able to point in the right direction for various post etc - one day I can only hope that I will remember a small part of where this and that is posted on here.  :)  :D  :)

CP those jars look like they are 500g to me.  I froze mine in ziplock bags but I can't remember how many :-))

good pick up JD. I have told our neighbours that if they want me to give them stuff they need to save their jars. They are happy to do this cos they always throw them out, and I have heaps of jar bottoms but no lids (DH seems to separate the two once they have been washed and throw the lids in the bin :-)))

CP, could you use those cellophane type tops Mum used to put on her jam jars or aren't they available anymore.  You wet them, put a rubber band around the top of the jar and they ended up as tight as a drum to seal the jar.

Yes, you can still get the cellophane tops, JD.  I recently found a jar of jam I had made on the top shelf of my larder with a cellophane top and, although the jam has shrunk away from the top of the jar a little, it was not mouldy and it was 3 years old.  I haven't opened it to try it yet, though.  I must do that.

There are places that sell new jar lids. I get mine from green living Australia. They sell via the web, but for those based in Brisbane, they also have a real store at Underwood.  I've also seen the cellophane lids in either Coles or woollies at Springwood.

Made this today my family reckon it's the best pasta sauce they've ever had. :P Not acidic like a lot of tomato sauces. Goes really well with ricotta gnocchi.  :D

Oh my oh my! This is just amazing! Thank you Megan! This is bound to be a regular with the 500g tomatoes we are picking at the moment!

I roasted the tomatoes in a clean airfryer for 15 minutes and transferred the juice from the bottom of the airfryer into the tmx too. Couldn't be bothered skinning the tomatoes :D :o but it didn't seem to matter :)

This is our favourite recipe for passata!  We roast the tomatoes first too, which adds an extra richness of flavour. 

Normally we freeze loads and loads of this sauce, but this year I am going to try putting it in jars and bottles and putting them through the Fowlers Vacola preserving thing.  That way we can store it on the shelf rather than using up all that freezer space.

Karen, when I freeze passata I pour it into a good sized ziplock bag and press it flat. That way it takes up very little space and thaws quickly as well.

We love this! I think I've made 20kg of passata this season alone!
I too freeze in zip lock bags and lay them flat in the freezer. I weigh 400g into each bag (and usually a smaller bag of 200g). Then if a recipe calls for canned tomatoes I can easily use a prefrozen amount.

Thanks for the reminder, Judy - this post is perfectly timed - I have tomatoes coming out of my ears at the moment and was wondering what to do with them ... I was thinking tomato soup, but passata is a much better idea.
