Thanks Thermomixer -- I've never tried it with ginger as I'm so hooked on the distinctive galanga flavour. There's something about galanga that's just... well...  8) unlike anything else, really.  :-))

I'm glad to know some people don't mind substituting with ginger. This will please those Ozzies out there ;) who have told me privately that they can't stand the taste of galanga!  :P

I've managed to find fresh galangal in our Asian store today so have sent a piece to Caroline.

Cold weather is forecast for here so I'm deffo going to be having a go at this soup soon.

Wow Katya!  On behalf of Caroline, I thank you too!  :-* :-* :-*

This sort of dedication to accurate recipe testing is most impressive! I have my fingers crossed that you will all like the soup  -- as Thermomixer pointed out, it IS a very distinctive flavour. If you've never tasted this combination of aromatic seasonings before, I suggest that you have at least five spoonfuls before deciding how you feel about it.

Also, if you are shy about seasoning, you may want to cut back on the chili peppers a bit. The way I've presented it is just perfect for my palate. I am one who enjoys a 'warm' heat from peppers but I can't tolerate as much spicyness as some people. If you and Caroline are spice lovers, then use the recipe as described and maybe even add some more peppers to it.

Tofu instead of chicken sounds great! Do you have veggie stock? A flavoured stock would be a good idea I think, to make up for less chicken flavour.

How did you juice your limes? I know how to juice lemons for lemonade - but there is a LOT of water in there... so how did you juice your limes... I would love to know!

Just blend your peeled, quartered limes on Speed 4 and press it through a nutmilk bag or cheese cloth. I made a picture with clementines and the frozen limes.

Wow, gorgeous! Thanks for sharing Tebasile.... I can think of many uses for those lovely lime cubes. What a great thing to keep on hand in the freezer!

AND -- I know a few people who would kill for that Mercedes glass.  :o Can we start bidding on it now? I would like to give it to someone in my family for Christmas... How about $10??? ;)

Heres a dumb question: what is cilantro??

Haven't found galangal anywhere around here but might give the thai restaurants a call and see where they get it from (or buy some from them). We've jus had an asian grocery store open in town  :o (that's a bit adventurous for this small town!) so might see if they have some too.

Mrs T wanted to check out the market in St Albans on Sunday - it was closed, but found galangal and lots of other goodies in the Viet shops.
