Maddy wow!

Today we made blueberry muffins from: http://blog.fatfreevegan.com/2007/07/berries-and-spice-muffins.html The only change I added 1 peeled grated royal gala apple because I was worried it would be too dry or not sweet enough.

I find it fun to compare nutritional information of low fat or seemingly healthier versions against regular recipes, if I compare these with  blueberry muffins from taste.com.au - mine have 35% less calories, 75% less fat, zero cholesterol and twice the fibre.  Tastes as good or better than regular muffins, most importantly kid & husband approved!

I made rhubarb crumble ice cream today, if you like rhubarb you would love it (based on a Delia recipe), kids wouldn't though, would be too tart.  ;D

Vanilla slice, orange muffins, burnt butter biscuits, sponge cake, cheese and bacon rolls, sausage rolls, sweet Chilli egg and bacon tarts, picklets, choc brownies, Judy's Moroccan sausages and steamed veggies. my feet hurt lol.

Busy day Mandi, isn't it amazing what you can do in a day if you are organised.

I only did a weber roast chicken, made the chicken stock powder and had a smoothie of pear, apple, watermelon & spinach.

Fairly normal day for a Sunday for me Judy. I like to have a good variety for the family for the week. Some things last all week and others are lucky to last 2 days.  I usually get to busy during the week to cook much except the evening meal. So Sundays is my cooking day.

Yesterday I made tomato ketchup from EDC (like the flavour but it is a bit thin) and peanut butter. Today so far I have made a double batch of ginger nuts. The first batch I blind baked as the base for Swedish Ice Cream Cheescake. The second batch is because DW came in the kitchen while I was making the first lot and said oh is that the ginger nuts.  The tone indicated that she wanted me to make some to eat.

After I finish the Ice Cream Cheescake I am going to make speck and salad pizza from dinner spinner but I am using turkey instead of ham.

Made six small meat pies today and had two for dinner with vegs.  Was going to have a quiet afternoon until the grandchildren rang to ask if I wanted to go blackberry picking.  I now have 3/4 of a bucket full sitting on the bench, so looks like more pie baking tomorrow.
