Mini Panettone
Makes 10-12 depending on size
Ingredients
2 eggs plus one yolk
1 teaspoon vanilla paste or extract
500g plain flour
2 x 7g sachets yeast
100g castor sugar
200ml milk
200g soft butter
140g mixed dried fruits
100g mixed peel
milk for brushing
flaked almonds for top
Method
Turn oven to 1900
Warm the milk to 370. Mine took 2½ minutes at speed 1.
Add eggs and vanilla. 370 speed 3 for 30 seconds.
Add flour, yeast, sugar and salt. :: for 2 minutes.
Leave to rise in the bowl for about 45 minutes until doubled.
Add soft butter, fruit to bowl. The bowl will be very high so you may need to push the dough down. Knead for 3 minutes. :: During this time you made need to use the spatula to keep it moving along.
Put large muffin wraps into muffins tins and put the dough in. Cover and leave to rise for about 45 minutes.
Gently brush with milk and sprinkle flaked almonds over.
Bake for 25-30 minutes. (mine only took 20)
These need to be eaten within 3 days or can be placed in the freezer for 6 weeks.

I don't think you could free form them cottchick as the mixture is very runny. You could just do more in normal muffin tins without the large papers. I bought the large muffin papers in Woolies.

These look great. Am definitely going to try these. DH's mum is Italian, so we always get one for Xmas. DH loves them!!! When we go to Bali he always buys the lttle ones from the bakery at Centro :) Off to Woolies tonight (without the kids yay!) so will make sure the muffin cases are on my list.

Wow Cookie they are spectacular. :o I adore Panettone, it reminds me, taste wise, of Saffron Cake that's made in Cornwall.

Me again! :-)) Cookie could you measure the size of the wraps that you used?If I make them I will have to improvise with baking parchment.

I am not a huge fan of peel do you think you could just put 240 of sultanas in place of the fruit mix and peel?
Also what about choc chips ;) choc panettone is yummo :P

Cookie, these look yummy. I will be making these, thanks very much. Megan ,Peel can be replaced with small pieces of apricot. The TMX chops Apricots very well.

Just bought a packet CC, mine are 14cm square but don't know if this is the only size they come in. Cookie, how much salt did you add please?

Only a pinch Judy. CC sorry I haven't been able to get on as much as I would like!! You could cut your paper so that it stands about 5-6 cms above your tin, at least.

Cookie I am so pleased with my little panettones - thank you so much for the recipe. It is going to become a firm favourite for Christmas from now on and I've been busy running around the street giving everyone a pair. I once tasted an Italian made bought one and didn't like the texture of it, too dry and heavy for me but this one is so light it almost floats away. I also cooked mine for 20 minutes and they look just like yours so I didn't bother to take a photo. I used chopped apricots as Chookie suggested instead of the peel and I would love a recipe for the chocolate version which Meagan mentioned if anyone has successfully done it. Ooh shucks. Thanks. We love them. I'd tasted panettone before and didn't like it either. A friend came over just as I got them out of the oven and she took home the recipe too. So easy and so tasty.

I have got mine on the second rise - I am attempting to make it as one big panettone (am using a silicone cake tin lined with baking paper) rather than individual and I used 100g of chopped dark chocolate instead of peel. I will report back in a couple of hours!

Mine didn't work so well - perhaps the recipe is best suited to the individual sizes or else I made a mistake somewhere along the line. It came out very flat and too dense to eat. I am not deterred though - will try this one again after Christmas (too tired to try and make it again today after a late night and a few champagnes last night!).

I did what Cookie said Meagan and used plain flour.
That's bad luck cottchick, try the muffin size next time.

Well I have done some individual ones and a mini loaf one they are about to go in the oven I put 100g of choc and 50g of sultanas they look yummy ;D will give them a taste test later ;)

Well done Meagan! I am thinking I must have missed some vital ingredient like the yeast perhaps, but I did have two very happy chooks tonight. Not often our chooks get pannetone for scraps!

I used 2 sachets of yeast, whenever it asks for a sachet I use two teaspoon measures of yeast the lowan brand one.
I haven't cut open the mini loaf. Might do that tomorrow for breakfast. The dough went quite brown with the chocolate melting a little, so if you wanted the white dough with the chocolate pieces I would add the chocolate during the last 30seconds. I found turning it out and cutting it on the thermomat worked well. Probably would add more sultanas next time. DH was impressed and I have to say I was too considering we used to eat pannetone a lot 8) when we travelled in a camper van through Italy ;D

Due to the cold weather no doubt CC. Mine took all of the 45 minutes and it was quite warm the day I made them. If you want to keep them soft and really fresh, pop them into the freezer. I left mine out for a day before doing that and they had firmed up quite a bit, heading towards the texture of the bought ones. Still delicious though and I popped one into the microwave from the freezer also which did soften it back up again.

Wasn't sure they were high enough. Lakeland don't do the paper cases like you had.
Unless I use bakewell paper? Is there a diagram as to how to make cases like that?

Gert I love panettone I have tried twice over the years to make one but they weren't that successful .

Give this one a try Brenda. Did it in a pot in the oven. Dead easy. I don't even like them and I loath. Custard but DH loves it. Just a spur of the moment bored thing and lucky it worked out except for the big hole in the centre. Really surprised myself. I used apricots and cranberries but you could use any dried fruit I guess.

Help please. I love Panettone. Last year bought very expensive Italian ones for gifts for special people. Then someone gave me one. It was much nicer than the ones that I bought. On checking, it came from Aldi. What I likes was the slight , wine taste. I think it was Masala.
Question, could I soak the fruit in Masala before adding. ?

Don't see why not Chookie. I was delighted to see this post as I had completely forgotten I had made that panettone for Ted and it was when he started to become ill from his cancer. Seems a long time ago. 34 here today!!!

Thank all. Just for interest. When in Lygon St. Carlton last week, an Italian deli had tastings of their Panettone. The top priced large ones were $70 and the medium ones $40.

I couldn't resist making these yesterday using the little pudding tins I bought in Adelaide.
I can't remember ever having panettone so I don't have anything to compare to but these are lovely. I noted a couple of changes some had made; so I used bakers flour, sultanas and craisins for the mixed fruit and mainly apricots with a little dried papaya with lime instead of mixed peel. I also cut down the sugar to 60g and they were perfect.
I only have 8 of the tins so I put what was left over into a 6 inch tin.
Wasn't sure how you are supposed to eat it but once cooled I had one sliced in half and buttered. Have now put the rest in the freezer.
I’ve ordered more of the little tins as they are so nice to use and the breads fell straight out without having to grease them.
Great adaption Cookie, will make again for sure :D

Soaking the fruit sounds good Cookie would add a nice taste I think.
Did you see Tenina's latest video where she uses a shop bought panettone and cuts it into 3 rounds and sandwiches it with a filling made in the TM? I could probably use the larger one that I froze to make that. Would be much smaller of course but that would be better. Might be a nice alternative for Christmas day and could be made a couple of days ahead. Will add the link.

I was never impressed with those you buy but having made this recipe a long time ago I still remember how nice they were. I went around the neighbourhood giving the excess to those who wanted to try them and froze some which I’m sure I would have used for bread and butter pudding. Yours look gorgeous in those little tins Julie.

Thank you Judy. You can see when something is really liked by how quick they disappear. DH wants me to make more so will do so when the extra tins arrive. I bet they would be really nice in a bread & butter pudding, another one to try at some stage. :)
