Fondant and gum paste made in TM?
« on: February 11, 2010, 11:51:18 am »
Hi,
Just wondering if anyone uses their TM for professional cake decorating? Someone has asked whether fondant and gum paste can be made well in the TM.
Thanks

I haven't had much to do with it but my sister used to. With the limited knowledge I have on the subject I would say TMX would be ideal because these icings a made like dough with some of the recipes starting on stove top to melt sugar etc and need low accurate temperatures - sounds like a job for TMX. Here's some recipes:

Thought that I had posted about cake decorating?  Maybe it was icing?

Wonder if you can contact mel http://www.forumthermomix.com/index.php?topic=1882.msg17695#msg17695 ?

She may have some answers

Sorry, have not tested any recipes. Was really just researching for a customer who decorates cakes and was looking at purchasing a kitchen aid instead. Was hoping there was someone here who might have been able to say yay or nay to it being successful in TM.
Never got round to testing recipes, dont know what the end result is meant to be like as have never made or used fondant or gum paste.
Hopefully someone else has and can help.

I might get around to it at some point then.  I make kids cakes.  So if no one else does, I will post back here how it goes, but it wont be any time soon - only just getting my TMX today

How funny, I went looking for a thread here on fondant and found this one updated today. :)

I'm going to try fondant in the TMX for my son's birthday next week, will update when I do.

I've still not made it in there yet, but it is great for the "kneeding" stage :) put it in, blitz for a few seconds and its all soft and useable :) BRILLIANT

I must try making buttercream with the TMX. It gets too 'fluffy' in the Kitchen Aid, so I think it would work much better in the TMX. I'll have to try it out soon and report back...
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

I dont know there is such a thing as too fluffy of butter cream, esp if you want to colour it (since the fluffier you get it the whiter it gets).  I've made buttercream in the thermomix, but I def prefer my kenwood for that.  It just does not get enough air through it in my opinion
