CHRISTMAS / Cooking Christmas Pudding?

I have been making our family Christmas Pudding for years.
I now make it in TMX !Yum.
I usually cook it in a large pot with water 1/2 way up the side of the pudding bowl and steam it.
My question is can I cook the pudding (in stainless steel pudding bowl with lid) in a large metal steamer Chinese steamer?
The only difference is that the pudding is above the water not sitting in it.
Thanks for your collective wisdom and experience.

Special Diets / Help making UMAMI PASTE dairy Free

This may be a silly question as some recipes just cannot be made dairy free and Umami Paste may just be one of those recipes!

Does any body have any ideas for making Umami Paste dairy free?
Parmasan cheese is obviously integral to the complexity of this amazing paste.
But it would be great to be able to make it and use it to add depth and complexity to our food.

We avoid dairy as we have a son who is allergic to milk proteins so it is not the lactose that is the problems so all dairy is out.
Help with this would be appreciated. (If possible!)

Cakes / FRUIT CAKE with 3 ingredients

This is a very South Australian Recipe as Iced Coffee is consumed in great quantities here.
This is a fun recipe that works every time and has THREE ingredients!
It is affectionately called" FU fruit cake". This stands for Farmer's Union Fruit Cake.
Farmer's union is our famous brand of South Australian iced coffee.

Ingredients

500 mls Farmer's Union Iced Coffee
1 Kg Packet mixed fruit
2 cups SR flour

Method

Soak fruit in iced coffee over night in the 'fridge
Place into TMX
Add flour
Mix  Reverse speed 1 for30 seconds until well mixed

Place in a greased and paper bottomed cake tin and bake at 180 degrees for 45 minutes. Then reduce to 160 degrees until skewer tests clean.

Tweaks
I am sure you could make your own iced coffee (sweetened however you like) and made with soy or rice milk for dairy free

This cake is so easy and good for this time of year!
This is my first recipe post but a very old recipe.

I have made the Carrot cake from the Traveling With Thermomix Cookbook.
Does any one have a recipe for a lemon glaze for Cakes?
I have tasted this cake with a glaze.
