This is a recipe for deconstructed Califorian rolls. It has all the same ingredients. It can be served as a main meal or side dish. It can be vegetarian by substituting the smoked Salmon with steamed pumpkin.
Ingredients
400g Sushi rice, ( can use Risotto rice) washed.
460 g cold water
1 cup of Sushi seasoning with 1 teaspoon Wasabi paste stirred through.
100 g smoked salmon , cubed
1 Lebonese cucumber cubed
1 large Avacado cubed.
3 sheets of roasted Nori Seaweed wrappers, 2 sheets cut into cubes with scissors. 1 sheet cut into 3 and then thin strips
Salt to taste.
Dried Wakame, ( optional)
Method
Place rice and cold water into TMX bowl, temp Varoma (31), temp 115 (5), soft speed reverse, for 10 minutes.
Let sit in bowl for 15 minutes.
Remove from bowl with fork into a large flat dish.
While still warm gently pour over Sushi seasoning with Wasabi and keep turning the rice over until cool.
Add cucumber, Avacado and cut up seaweed sheets and Salmon.
Gently fold in .
Place on serving dish and sprinkle with sliced Seaweed or Wakame if using.

Chookie how very clever. We love sushi, so we will love this. I like the idea of putting the wasabi with the vinegar.
