Pudding Truffles
Ingredients
500g fruit cake or pudding. (cheap bought ones are ideal)
100g dark chocolate
60ml brandy, sherry or orange juice
2 tablespoons apricot jam
white chocolate ( I used 3 freddo frogs I had)
red and green glace cherries cut small
Method
Break the cake into small pieces and place in bowl. Blitz for 5-7 seconds to break it up. Set aside.
Melt the dark chocolate-make sure your bowl is completely dry. Break it into pieces and melt for about 2 minutes at 500 on speed 3.
Add the cake crumbs, apricot jam and brandy. Mix just enough to combine.
Remove from bowl and let sit in fridge until firm enough to roll into balls about the size of a walnut.
After rolling into balls, melt white choclate and put over the top of the 'puddings' to look like custard.
Decorate with pieces of red cherry and green cherry.
I didn't write down the TMX instructions when I made these so I have done them from memory. Hopefully I haven't done anything too way out.

Cookie where's your photo gone? Seems like things are going missing on this site lately ???
Made these today, they were fun to make. I did dip in dark chocolate then finished off with the white on top. I also used freshly squeezed orange juice in place of the brandy as they will be served to non-drinkers and children.
Thankyou for such an easy recipe to make, I got 39 out of my mix. ;D

:D :D Cornish. I did do a taste test of the mixture before rolling, so in reality it did make 40! ;D

This is the cook's duty to make sure we have it right. Nice one JulieO - they are certainly worth the effort and people love things like this.
