Ladies. Your challenge, should you accept it, is to make and share something that could go in a lunchbox. It may be for an adult or a child. This can include things savoury and sweet. Healthy or not so healthy. We will leave it up to you. A lot of schools are nut free but I will leave it up to you if you go with this.
Let the fun begin. Thanks for the great suggestion Jamberie.
-
Great! I hope this can be useful for everyone in some way :) I'm guessing a lot of the recipes would be good for picnics and other 'packed lunch' occasions, not just work and school :)
-
I made finger buns using this recipe
http://www.recipecommunity.com.au/baking-sweet-recipes/sweet-bun-dough-thermomumma/282040
I added sultanas and divided the mix into 14 individual buns and cooked them in my French stick tins.

I'd love one of those in my lunchbox Kim.
-
Great idea and what a quick response Kim, I love finger buns.
-
I'll have to figure out something and come back. I hope to make these kinds of things more this year for my children.
-
Blimey Kim you were quick! Loving the finger buns 8)
-
I had some blueberries kicking around in my fridge that needed using so made Blueberry Muffins (http://www.recipecommunity.co.uk/recshow.php?rec_id=97--).I pulsed the butter, sugar and flour in the TM but then folded the dry ingredients into the wet that were in a separate kitchen bowl.I didn't want to over process the mixture in the TM.
-
Wow, Thanks Jamberie for this suggestion as I can try some of these recipes for my fussy kid :)
Love the idea of finger buns Kim and also those blueberry muffins look yum CC, Hope to try one soon!
-
The finger buns and muffins look wonderful.
-
Lovely looking muffins CC. A great way to make them as they say muffins should not be over mixed.
-
I made a version of zucchini slice ready to freeze for adult and child lunches. I also posted my method as it differs slightly from others :)

looks delicious Jamberie and thanks for posting the recipe. :D
-
Yes I was quick but must confess I had decided to make these before I saw the challenge! They just happen to be something I pack in lunch boxes too.
Delicious Jamberie. Love the muffins CC.

Kimmy, do you freeze these? And do you use her icing with the solite or crisco? They've been on my to-do list for quite some time, you've inspired me to give them a go :)
-
Made fruity's 5 cup loaf. (http://www.forumthermomix.com/index.php?topic=11512.0) Thought it might be good for lunches as it can be adjusted to suit any diet requirement and it freezes well. I'm sure it could be made into muffins as well.
-
You really are the finger bun queen Kimmy, they look wonderful. :D
-
It's great to see such a quick response from our members for this challenge, well done ladies.
-
I'll be back! ;)
Very nice looking buns Kimmy - Do they freeze well?
-
Mich, thanks for bumping that. I just had a thought. I could used tea for the liquid and soak the fruit in it before hand. Thank you.
-
What a great challenge; I remember when my children were little and shopping with me finger buns were the only thing I would buy for them for a treat at the end of the grocery shopping (other than fruit of course). Must make these and that 5 cup loaf as well. Now to think what I would put in lunch boxes.
-
I haven't frozen the finger buns but can't see why they couldn't. I don't have a big freezer, so we generally eat them until they are gone. They do stay fresh for a good few days. The icing I used is a basic women's weekly recipe. Combine 1 cup icing sugar, 10g melted butter and 1 tablespoon milk. Mix until smooth.
-
Tonight I made pikelets for the boys using this recipe http://www.trtlmt.com.au/fluffy-vanilla-pikelets/
We always have leftovers and they are great the next day cold, buttered and placed in lunch boxes.

-
They are our favourite pikelets Kimmy :)
I just made Hally's Ham and Cheese Zucchini scrolls. I made mini ones so that a couple will easily fit in a bento style lunchbox.
-
Gosh to think I had vegemite or cheese and jam, or maybe sultana and apple sandwiches. By lunch time it was a molten mass of yuck anyway. Lunches have come a long way. I think the frozen iceblocks things have helped a lot.
-
Fantastic ideas Michele,Amber and Kim. 8)

I often wonder what happened to Fruity's toe - at one stage she was thinking about amputation.
Lovely pikelets and scrolls girls.
-
Amber we love Hally's scrolls and they keep well for lunch boxes. Great idea making them smaller. Great photo too.
-
Here is a link to some lunchbox ideas from a blog I subscribe too.

Thanks for the link cookie.
When we were little mum made coconut jam slice for our luncheboxes and I've made this one for my children regularly too
http://www.bakeplaysmile.com/coconut-jam-slice/
Today I used 6 sliced nectarines instead of jam (I found the idea in a magazine this week) and I think it tastes better as its not as sweet as the jam version.

I do like that idea Kim and it looks lovely.
-
Oh yes, what a great idea Kimmy! I think I'll have to try that too :)
-
My children hate everything. I had so many ideas for lunch boxes but they have the same things over and over, so boring. When I put something different in, it doesn't get eaten (unless it's chocolate or something).
-
You are a fabulous baker Kim 8)
-
Lovely slice Kimmyh
-
That is such a great idea Kimmy - and looks yummy too ;D
I just whipped up a batch of milo yoghurt to freeze for lunchboxes....but....doesn't look like any is going to make it to the freezer ;)

Don't worry Sarah. Lots of kids are like that. It's shocking the amount of food that kids throw away at school. It's best to give them something they will eat.
-
The slice looks lovely Kim.
Sarah, at least you don't have to try and come up with new ideas, I would have liked children that just wanted to stick to the one thing.
-
We love your milo yoghurt Astarra. The pots are cute too.
-
TRTLMT's mix and match quiches from her lunchbox book today :)
Our additions were grated zucchini, shredded chicken, tomato slices and salt+pepper.
-
Thanks for the link cookie.

That looks so yummy Kimmy, do you use fresh nectarines or canned?
-
We made some Anzacs for Australia Day, but added sunflowers, sesame and pumpkin seeds for a change. DD saw the idea in a Nigella book. They were really nice. Ok for Lunchboxes if your school doesn't have a no seed policy.
-
I made a chocolate slice yesterday, and lots of mini quiches for lunch boxes..
-

We have no nuts, which makes me pause when thinking of things to try (no almond meal, nothing with cashews etc). Of course it's all moot, since my children hate it all.

Yummy, again though, wasted on my girls.

Great cooking ladies.
Astarra I used fresh nectarines.........didn't know they came in cans.

:D just made the banana bread bites and mini doughnut balls from trtlmt blog.
Both a huge hit here 8)
I'd hate to admit how much money I have spent on doughnut ball for my kids in the past :-[ but they have told me these are better than the brought ones 8)
BTW, please excuse my poor photography skills! ???
-
Nothing at all wrong with your photography Astarra.
-
Looks good to me too, tasty little morsels.

Wonderful baking Astarra 8)

Lovely Astarra. Did you use a cake pop pan to make the donut balls?

-
Great muffins Astarra. How long will that last you?
They will only last just over a week here - with the 6 of us, each dozen is only 2 each which doesn't go very far!!!
Thanks everyone for the kind words :-*
And yes, cookie...it sure does make packing lunches a million times easier, especially with the allergies we have in the house!!! :D
