Title: Pulse and Pumpkin Curry - A Taste of Vegetarian p.73
Post by: cecilia on August 25, 2013, 06:25:27 am
Nicely seasoned and didn't take long.  Unfortunately I didn't have celery but I used broccoli in the Varoma with the beans (or snow peas in our case).  I chopped the pumpkin into big cubes but some of it still went mushy and all of the tinned beans just became a thick gravy, along with the onions and spices.  It tasted fresh and pleasant, and was a quick, simple lunch served with rice.  This serves four, as a light main meal.  The leftovers, whizzed up with a package of cream cheese, made a delicious dip too.  Win-win!

What a coincidence... I didn't see your review Cecilia, but made this for the first time tonight. It's due to be a regular for us as it was so quick to prepare. Like you we didn't have celery, I also used home made garam marsala instead of curry powder. Yes the flavour was fresh, different veg could easily be subbed if you didn't have pumpkin too.

Love it when I'm looking for a recipe and I not only find it but also my own review of it!  Thanks to the developer of this recipe.
