Judy,  glad you liked them,  also I get a real buzz when members fiddle with the recipe Judy you can really turn it on with your meals.

We enjoyed this for dinner tonight. DH and DS6 found the coating a little too spicy (DH thinks he would use 3 slices of bread rather than 2, and use only 1 tbsp of KFC spice mix) but DS10 and I both really loved it! Delicious peppery taste, and I like the addition of the rosemary flavour.

We forgot to cover in foil (truthfully, DH was sure the recipe didn't call for this until he re-read the recipe after 20 mins in the oven already) so only cooked for 40 minutes and the chicken was perfectly moist.

We will definitely make this again, and if there were ever any leftovers I can see that it would be very popular for school lunches.

This was a great "last minute" use of the KFC spice too (as compared to having the chicken soak in the buttermilk in advance).

Kerryn  glad you liked it.  It is rather nice cold.  Was looking for something for dinner tomorrow so might revisit this.

How do you think this would go with some fillet pieces? I'm not a fan of drumsticks but love the sound of the crumb mix.

Wonder,  they would be fine.  Just don't over cook them.  Nice and low fat.
