Pickled Vegetables

Does anyone have a recipe for pickled vegetables. I am thinking of the ones MIL made many years ago. They have cauliflower, carrot and other stuff in them. I tried about 40 years ago and they weren't very good. DH loves them so I thought I would try again. Thanks.

I have checked Mr Google and also Taste. There is a good one on Taste. I just thought someone may make them regularly and have a super duper recipe.   :-*

Cookie the FSA has a recipe for Pepper Salad on page 152 that is pickled.Will send you the recipe ;)
Then Delia Smith has a recipe called Giardinere Pickles ( Italian Garden Pickles ) which might be good.

There is also a recipe in the new Jamie Oliver book, Save a With Jamie. He recommends making pickles instead of letting your excess veggies go to waste.

I could send you that if you like.

I make one from the very old Women's Weekly Chinese cookbook; page 114 and it is called Chinese Mixed Pickles and it is very nice. If you don't have the book am I allowed to type it out for you.

There's also a recipe for pickled carrots and other veggies in The Red Lantern cookbook featuring Luke Ngyuen. Let me know if you would like me to email you the recipe. It is very tasty. I can eat an entire bowl in one sitting.
