-
Good work Uni :-* :-*
-
I freeze most of my main meals and soups, but I never thought of making a list - that's a huge project, Fundj.
I have some condensed milk in my freezer at the moment, it will be interesting to see if it survives and is usable when I defrost it.
-
Cuilidh i have made MJs Passion fruit slice with (TM)condensed milk that was frozen at is was great
-
That's good, Uni. That's one on the list of the recipes I was planning to use it for!
-
do u make your condensed milk Cuilidh ?
-
No, I am not making my own yet, the one in the freezer is a commercial tinned one.
-
Let me know how u go , so i can add a note to the list, thanks
-
This is a great idea fundj, thank you so much for posting!
I just have a question about defrosting. As a general rule, do you just leave your frozen item in the fridge to defrost?
-
Uni,
Thank you, thank you, thank you.
You are one amazingly generous lady. Will print out, laminate and attach magnets on the back to go on the freezer.
DG :-* :-* :-*
-
DG it will be update many time, i would wait a while b4 printing
Amy if its meat of any kind, yes i do put it in the fridge to defrost .
any other item, if it going to get cooked at high temp i leave out.
my egg whites i leave out overnight to make pavlova roll .
i hope this helps
uni

Uni, what a great idea for a list. Just loving the way our forum members are coming up with lists to help everyone, your time is really appreciated :-*
K - could you freeze kiwi fruit for sorbets perhaps? Key lime pie freezes well apparently. K looked a little lonely ;D
-
Uni this is an excellent list. I was actually going to post a question last week to see if anyone knew if bocconcini would freeze ok but going from your list I think it will - surely if camembert freezes!
Oh - under L you have lemon crud - I think you mean lemon curd!
-
yes they do freeze well, thanks i will add it :-*

Yes it does, thanks Uni :)
I do have another question though...If I make a loaf of homemade bread, should I slice it up before I freeze it?
-
amy its up to you really and your needs, it is easier to defrost if its in slices and take out what u need
-

-
Can you freeze the pasta after you've cooked it, or does it need to be frozen in dough form?
-
Cooked pasta freezes very well. Do it all the time.

Great list I will copy it to Evernote to keep....can you freeze uncooked cake batter?
I recently bought one of the thermal pots and love making "steamed" type cakes in it overnight, I was wondering if I could premake cake batter in the TM and zip bag it and throw it in the freezer till we camp ( save taking flour, eggs etc camping )
-
Can you freeze Pikelets?
Would love to make some for DS lunchbox.
Thanks DG xxx

I'm going to be making butter tonight and was wondering if the butter and buttermilk can be frozen (separately ofcourse) and if the answer is yes, approximately how long would it keep for in the freezer? :)
-
yes they can be frozen Thermo , not really sure on how long maybe 6 months
-
I will most likely use them within a couple of months so I should be right. Thanks Fundj :)
-
i would use even after 1 year Thermo :-))
-
I froze thickened cream and when I thawed it in the fridge the consistency had changed. Is it still ok to use even if it looks as if it has curdled?
-
Yes it is Courton. not sure if it will still beat but quite OK to use in cooking. If I want to freeze cream to whip, I whip it then freeze it.
-
Thanks JD!
-
Vanilla Pods also keep well in the freezer.

My SIL has an abundance of eggs and asked how to and this is the Ido on freezing
Following are some easy instructions for freezing eggs:
Whole Eggs: To freeze whole eggs or yolks crack them into a bowl and gently stir to break up the yolk somewhat. Try not to incorporate air into the eggs. Label the container with the date and the number of eggs. They can be kept frozen for a year, and should be thawed in the refrigerator the day before you intend to use them.
Egg Yolks: To inhibit yolks from getting lumpy during storage, stir in a 1/2-teaspoon salt per 1-cup of egg or yolks. If using for desserts, use 1-tablespoon sugar or corn syrup per 1-cup yolks or whole eggs. Label the container with the date and the number of egg yolks. Use up extra egg yolks in recipes like sauces, custards, ice cream, yellow cakes, mayonnaise, scrambled eggs, and cooked puddings.
Egg Whites: Raw egg whites do not suffer from freezing (cooked egg whites are very rubbery). No salt or sugar is needed. Break and separate the eggs one at a time, making sure that no yolk gets into the whites. Pour into trays and freeze until firm. Label the container with the date and the number of egg whites. Use up extra egg whites in boiled frostings (i.e., 7-minute frosting), meringue cookies, angel food cake, white cakes, or meringue for pies.
Hard-Cook Egg Yolks: Hard-cooked egg yolks can be frozen to use later for toppings or garnishes. Carefully place the yolks in a single layer in a saucepan and add enough water to come at least 1-inch above the yolks. Cover and quickly bring just to boiling. Remove from the heat and let stand, covered, in the hot water about 15 minutes. Remove with a slotted spoon, drain well and package for freezing.
Hard-cooked whole eggs and whites become tough and watery when frozen, so don't freeze them.

Does anyone know if rice pudding freezes and defrosts well?
-
I've never done it Amy but I found this comment on the web by someone who did on this forum (http://ths.gardenweb.com/forums/load/onceaweek/msg0614495527918.html) -
"I love rice pudding too and my picky kids won't touch it!??? So I did try freezing it...once....it was pretty gross....very mushy and the texture was really weird afterwards...the flavour was the same but it was watery and the rice was grainy and mushy."
-
Aha... I think that might be a "no" then ;D ;D
Thanks Judy :-* :-*
