Title: Seed Bread Recipe

Seed Loaf

Ingredients:

300gms spelt or wheat grain
200g Bread flour
1 medium cooked potato
40g natural yeast or 1 sachet dry yeast
2 teaspoons salt
Blob of honey
1 dessertspoon oil
260g luke warm water
Sunflower seeds

Method

Mill Spelt or Wheat grain on speed 9 for 30 seconds (a bit less for Spelt)

Add bread flour, potato, yeast, salt, honey, oil and water and knead (  :: ) for 2 minutes (do not mix first). If mixture is sticky add more flour in the first 30 seconds of kneading.

Add some sunflower seeds for the last 20 seconds of kneading.

Place mixture into a bread tin or a 12 mini loaf tin or free form on a tray

Bake for 10 minutes on 100°C, then 30 minutes on 180°C.

This looks delicious. Getting my TMX is going to be like Christmas for me. I only have 9 more sleeps. I'm going to be thermomixing (is there such a word?) for ages and ages.

Somebody suggested that it is good to soak the grains overnight to soften them, and not blitz them so much for a "sprouting grain" type bread.

Does anyone have a TM sprouted grain bread recipe?  I'm keen to try, but just got my TM 2 weeks ago - and am busy practising all the demo recipes 'cause I'm now a consultant!  Eventually I'll play more with my own recipes, but at the moment am too busy trying to get organized for the demos!

I needed a loaf in a hurry and this fitted the bill. I didn't have any grains, but I did have some spelt flour so I used that. I weighed my potato at 160g and microwaved it until soft, then cut it in 4 and let it cool a little. I put it in the bowl and chopped on speed 5 for a few seconds before I added the rest of the ingredients. I added the sunflower seeds after a minute as I was a little concerned that they would not mix in only 20 seconds.
My loaf split a little as it cooked, but it smells pretty good. I can't wait to taste it.

The bread has quite a nice flavour, but it is very heavy and dense. I'd like to give it a try again, but let it prove before baking and see if I get a lighter texture.

It looks good ES but we like soft loaves here too.  As it originates from a German consultant, maybe that's why it's denser - isn't European bred much heavier than ours?
