Title: Beetroot & Bramley Soup with horseradish

Beetroot and Bramley Soup with Horseradish. ( I must be mad making soup in summer :D)
250g raw beetroot ( I cheated and used vacuum packed cooked beetroot)
1 medium onion, halved.
30g butter
1 Bramley Apple, (http://en.m.wikipedia.org/wiki/Bramley_apple) peeled and quartered
500g water + 1 Tbsp of chicken stock paste.
1 Star Anise
Salt and pepper

Garnish.
Snipped chives
1 tsp horseradish sauce mixed with 1 Tbsp natural yoghurt.

1. Place the beetroot in 1cm of water in a baking tray and cook in a preheated oven ( 200c) until cooked.Run under cold water until cool enough to handle and then roughly chop.
2. Place the butter,apple and onion in the TM bowl and chop 3sec/ speed 5.
3. Scrape down bowl with a spatula then sauté 5mins/100c/speed 1.
4. Add beetroot,water+stock paste,star anise and pepper.Cook 20mins/100c/ :-: 1
5. Remove the star anise and blend 30sec/speed 9.
6. Garnish the soup with a dollop of the horseradish/yoghurt mixture and snipped chives.
