Pasta Sauce with Sun-Dried Tomatoes:
Ingredients:
50g parmesan (roughly chopped)
5g parsley leaves
7-8 basil leaves
2-3 sprigs of thyme (leaves only)
1 shallot or small onion (50g)
2 cloves of garlic
40g extra virgin olive oil
4 anchovies (drained)
1 small dried hot chilli pepper / peperoncino (optional)
100g sun-dried tomatoes (drained)
50g white wine
20 black pitted olives
Preparation:
* Chop parmesan, parsley, basil and thyme leaves for 10 seconds on Speed 9. Set aside
* Start TM on Speed 6. Add and chop garlics and onion for a couple of seconds
* Clean down the dies of TM Bowl. Add oil, anchovies and chilli pepper if you like hot it hot. Cook for 5 minutes at 80ºCon Speed 1
* Add sun-dried tomatoes and chop for 20 seconds on Speed 8
* Add wine and olives. Cook for 5 minutes at 80ºC on Speed 1
* Mix the sauce with boiled-drained pasta. Serve into the plates
* Sprinkle with parmesan-herb mixture

We had this for dinner tonight. It is really delicious. I did it as part of the latest challenge but it will become a favourite weekend meal.

I used half a long red chilli Judy, with the seeds.
DH was watching Jamie the other night and said he finely grated a frozen chilli over something or other. It was like a fine chilli powder. I love the sound of that. We always freeze our excess chillis so I have lots.

I saw that too Cookie, thought it was a great idea. I have a bag of home grown chillies in the freezer too, enough to keep me going for 12 months I reckon :D
