That's great TC.  Have you decided what you are going to make first?

Ditto.  I often make risotto without the wine and just add extra stock instead.

I whipped up a version of the beetroot salad from the EDC for lunch using golden beetroots and heirloom carrots.

The ingredients for Turkish Delight Ice Cream are in the Thermomix now (recipe is from Alyce Alexandra's book, Quick Fix in the Thermomix).  I've never made icecream before so I am excited to see how it turns out.

I am also toying with making some Goat's Cheese this afternoon (another recipe from Alyce's book). I currently spend a small fortune buying Meredith Farm Goat's Cheese so if I can make one that tastes half as good I'll be very happy.  Has anyone had any success making Goat's Cheese before?

Chit Chat / Re: Dehydrator help please!

Joining this forum could prove to be dangerous - one of the reasons I bought my Thermomix was to de-clutter the kitchen but since reading some of these threads I think I 'need' an ice cream maker, pie maker and now a dehydrator!  Luckily I already have the pizza machine.

I made a 1/2 serve of this salad for lunch yesterday.  Despite the pumpkin being quite bland (no fault of the recipe although it would probably have been more tasty if I'd roasted it rather than steamed it in the verona), the combination of flavours in this dish was great and very healthy.

I made a half-serve of these tonight and they were delicious.  I didn't have any dijon mustard so I substituted hot english mustard instead (reduced quantity).  My ratio of salmon to the rest of the mixture was probably a bit higher too as although I measured out 200g of salmon it equated to over 2/3rds of my 410g tin. Served the patties with a bit of lettuce & spinach straight out of the garden and the sour cream/sweet chilli sauces.  Highly recommended!

Introduce Yourself / Re: Another New Thermie Owner

Thanks everyone for the warm welcome.  I love this forum already!

Until I get fully used to Thermie I will be using recipes from cookbooks and this forum but who knows maybe one day, in the not too distant future, I'll be posting my own recipes for others to try.

I'm going to cook the Salmon Patties from the Quick Fix in the Thermomix cookbook - haven't done them before but all the reviews are pretty positive.

Welcome Kiki.  I have had my Thermie for less than a week now and have already cooked quite a few of the recipes from Quick Fix in the Thermomix.  I really recommend this book.  I'm going to make the Salmon Patties for dinner tonight.

I was very lucky with the delivery time of my Thermie - ordered on a Wed afternoon and it was delivered the following Monday night.

You are going to love it when you get it!  Good luck.

I made a version of this again tonight, however instead of prawns I used chicken thighs.  I cooked them for a couple of minutes longer than the prawns and it was another great dish.  I missed the step on the recipe where you set aside the lemon zest and garlic but found out that the flavour of the dish was not compromised. Once again, I stirred in some grated parmesan prior to serving this dish,  Definitely another winner!

Bread / Re: All About Sour Dough .
« on: October 19, 2012, 04:41:22 am »
After reading through this thread I decided to try my hand at a sour dough loaf and have my very first starter on the go.  I'm on Day 3 and things are looking pretty good so far with some activity (small bubbles) visible.  I used wholegrain rye flour and water for my starter.  Fingers crossed I don't kill it!

I made the Fennel Seed and Leek Bread yesterday.  As Judy said, the dough was very moist so I ended up adding a bit more flour and even then the dough was sticky and a little hard to work with (I am a very novice baker).  Although I'd originally intended to mould it into a free-form cobb loaf, because of the consistency of the dough I decided to pop it into a loaf tin instead.  The end result was pretty good (sorry, no photo) and tasty.  Despite extending the cooking time by about 10 minutes I think the bread was still a tad underdone in the centre.  Next time I'd cook it for a bit longer.

Had a couple of slices with pumpkin soup for lunch today - really nice flavours and surprisingly filling!

Cakes / Re: Carrot cake with nuts Thermomix easy
« on: October 18, 2012, 03:03:53 pm »
I made this one today. Can't believe how quick and easy it was to make. I used the same icing as Amanda and Maddy (80g cream cheese, 40g unsalted butter, 30g maple syrup, 130g icing sugar).  If I was to make the icing again I'd probably reduce the amount of maple syrup slightly as I did find it very sweet.  Definitely a winner!

Now that I have the Thermomix, I thought it was time to try my hand at bread making. When I first looked through Alyces' book this was one of the recipes that caught my eye - olives and feta - what's not to like?

I didn't look closely at the quantities required before I went shopping so I ended up using slightly less olives than stated in the recipe but I don't think this impacted the finished product. This bread is delicious, especially served warm (straight from the oven) with some olive oil and balsamic vinegar.  Another great recipe from Alyce. Definitely 5/5.
