Title: Pumpkin Loaf

Made this today, converted from a recipe on 'Bread recipe' App.
Quick and easy to make.

DH gave it the thumbs up, very nice. :)

Pumpkin Loaf


Ingredients
220 g Sugar (can reduce to 150g)
70 g vegetable oil
2 eggs
1 Cup Cooked & Mashed pumpkin
30 g Water
230 g Plain flour
1 tsp Baking soda
1/4 tsp salt
1/2 tsp Baking Powder
1/4 tsp Cinnamon
1/4 tsp nutmeg
1/4 tsp All spice
1/4 tsp ground cloves

Directions
Pre cook pumpkin if not already done and mash, set aside to cool slightly

Pre-heat oven 180
Add sugar to TM, whizz 10 seconds speed 9. Scrap down sides
Add oil and eggs, mix 10 seconds speed 4.
Add remaining ingredients, mix 5 sec speed 3. Until just combined. If needs further mixing then mix with spatula.
Pour into greased and lined loaf tin, bake 50 min.

Made another Pumpkin Loaf today, cut the sugar and oil down a bit and added 1/2 whole meal flour as well.

No problem GF,
Leg is very stiff and sore, mainly my calf muscle. Once I stop I'm finding I need to use my crutches to get about. But I'm sure they will get stronger and stronger each day. :)

I had to cut off the end bit so DH and myself could try some before I could post the recipe. I was pleasantly surprised how nice it tasted. I definitely will be making this again. :)

It's more like cake than bread Chookie, I like it sliced with a bit of butter spread on it. Especially nice when warm.

Yes, no doubt, with gentle persuasion, it will get stronger - but do take it slowly!!  Isn't it an absolute cow, though, having something painful going on with your legs . . .!  Mobility goes downhill fast - very frustrating!  Hang in there!!  Here's hoping you'll be back to full strength very soon. :D

Yes i know it is more like cake,  but recently had toasted banana loaf at a swish cafe and it was very nice.

Thanks Mandi!! I LOVE all things like this toasted (banana bread included). I generally make them, let the family eat them for a day or so then slice and freeze for indulgent weekend breakfasts  :D :D

Yes I cut down on the sugar as well. Doesn't take away from the flavor. Might make another one tomorrow. :)
