I have a pumpkin chiffon cake in the oven at present.

While the egg whites were whipped in a KA mixer, Tuffy was given the job of pureeing the previously-cooked pumpkin and mixing in the spices, eggs, flour and butter that constitutes the rest of the recipe. 

Tuffy did save me some time as there is usually some time spent mashing and sieving the pumpkin - to remove any lumps, however I also do at times put it through a potato ricer to speed things up but Tuffy did the job much, much faster. 

So far things are going well, the cake is rising as expected and hopefully will turn out nicely.   More later, possibly a photo.

Sounds nice Andiesenji, I've heard of pumpkin pie but never a cake. Would love to see a recipe if and when you have time.  :)

Today my Thermomix and I have made:

- whipped cream
- guacamole
- bread rolls
- stuffing

still to go:
- gravy
- custard

:)

Wish it could roast my turkey for me, lol.

No cooking today either, we're living on leftovers. Just a few banana milkshakes and cold coffees again.
May all dairy items in your fridge be of questionable vintage.

Yes leftovers for us too. Boxing day is my traditional day of relax as there is enough food not to have to even think about what to cook or make. Cricket and nothing much else although this year in between I am catching up on all my unread posts here  :D

It has yet to be converted to metric - or for the TMX  but this is the recipe I used:

I just dusted the top with powdered sugar because both I and a few of the people who were going to be eating it are diabetics. 

I simply used the TMX to process the previously baked (and cooled) pumpkin - removed all the pumpkin from the bowl then measured back in the ingredients for the cake base while I whipped the whites in a KA.

So far, I have had less than optimum results with whipping egg whites in the TMX.  I was careful to take it apart, put it through the dishwasher, make sure it was entirely dry, etc., etc., etc., and I still did not get the volume I expected and which I got with the same amount of whites in the KA with the wire whisk.  Maybe I am doing something wrong, I am still pretty new to the TMX but am not sure the butterfly really gets the job done.  It's my only complaint!

Thankyou Andisenji for posting the link.  I know others have had success with whipping egg whites, but I just find using the KA in this instance much easier and quicker and I know it will work every time.  :)

Andi, I'm also not satisfied with the end result of the egg white whipping.    I found that there was still some liquid in the bottom of the bowl when the top mixture was O.k.    I removed the whipped white and removed the liquid into another dish and beat it by hand,  before adding to the whipped whites.    Rather messy process.   being "chookie" I have plenty of eggs so will experiment.

Same results here, too, with egg whites.  I also just use the KA for them.

WE've made lots or icy drinks again today (it's warm), lasagna tonight with a sorbet or strawberry foam to follow.  Bread too as we've run out again!  People must eat the stuff.

I made the icecream torta from the calendar for Christmas. Delicious.

To use up some left-over roast pork I made a shepherd's pie - made the whole thing in my TMX. Made another batch of raspberry cordial.  I have some blueberries in the freezer I want to get rid of - has anyone made cordial out of them? I love the raspberry but don't know about a blueberry drink.

Haven't tried but can't imagine they would give the same amount of flavour?  But then there's Ribena  ;)
