These were great fun! DD 2 helped and enjoyed eating the pastry and making marks in the gingerbread people with her fingers :o
Easy & yummy, the dough was great to work with and the end result was not too hard and not too soft.

I love these biscuits. They are a true hit in our house. We didn't ice them and they are still yummy. I found It quite hard to roll the dough. Not too sure what I did wrong cause everybody else seems to find it easy.  It just kept crumbling with me and the shapes broke quite easily. The kids loved helping out though. I'll definitely make these again.

These were great here to, I didn't have any problems with the dough after I gave it a good knead although mine weren't as dark as every ones

Love these biscuits! So easy and so yummy and not too gingery for the discerning palate! Best of all, one batch is enough to make enough cookies for my cookie Christmas tree!

Thanks Kimmy! I got one of those cookie cutter kits! Too easy and so much fun to decorate. Even made Royal Icing in the thermie! I can't wait to get started on my next one!

Completely out of season, but last night I made some more of these.  I had been inspired after DS4 had insisted on a gingerbread man from the vending machine when we were stuck in hospital. He ate only one hand and told me he was full which I thought was strange so I tasted it myself. Oh my goodness, it was quite literally cardboard.  So we returned on the promise that mummy would make him proper ginger bread men that tasted yummy. I've made these before and on the second visit I remember now how my dough was very crumbly the first time so added a good dollop more syrup which makes them a bit easier to handle. I also reduced the amount of bicarbonate to just about a quarter of a tsp so they didn't rise too much. I rested the dough before rolling and cutting and when the shapes were cut actually put the whole tray in the freezer for an hour. I then baked for 11 mins at 200 degrees (again to try and keep their shape). I am so pleased with the result and will use the above method each time now.



Edit: forgot to add that eyes and buttons are mini M&M's and the mouth was shaped using a teaspoon.
