Three Cheese & Mushroom Calzone - For Foods Sake

I was surprised to find this hasn't been reviewed already.  :o

I made a half recipe which made one big calzone, though I did use a whole roasted red capsicum instead of using half, and I would do this again.

After cooking the mushrooms, spinach etc and squeezing out all the liquid, I added a good dollop of Tenina's sundried tomato pesto to the mix and combined.

I also used a good dollop of her caramelised garlic paste on the base of the calzone, both of these flavour enhancers really did do their job.

Both DH and I loved this, the flavours just went together really well and the dough kept its shape, was able to hold by hand to eat, didn't fall all over the place IYKWIM.

Another winner Tenina.  :D

If I ever have any dooubt about making things, when I see your photo Julie I quickly change my mind.
May all dairy items in your fridge be of questionable vintage.

I made this recipe with a few variations. I swapped out the mushroom mix for leftover diced roast pumpkin that needed to be used up.

I also made individual small calzone instead of a large one. I divided the pizza dough into 8 pieces, which I rolled out into circles. I put the filling ingredients over half of each round, then folded it over and folded the edges like a pastie. I ended up using much less of the ricotta and grated cheese than the recipe suggested.

The result - very good! Excellent for my lunch at work the next day, and the rest are now in the freezer. I do wish I seasoned each of them a little better - maybe the mushroom mix had a bit more salt and pepper.

Like Julie, I used the Sundried tomato pesto.  I spread it over the dough before assembling.
I made 4 individual ones....leaving out the mushroom portions for the kids, and put ham in theirs.
I really liked the flavours, but hubby didn't like the taste of the fennel seeds, so will leave that out next time  ;)

Dinners like this I am thankful having the TM.
I whipped up the ricotta first



Then the pesto



Then the calzones.
Nice feeling making everything from scratch  8)

I know what you mean Maddy and JulieO. I don't mind if it takes  me ages to make all the bits and pieces I enjoy it. Our pizza on the weekend was like that. Make tomato sauce, the cream sauce, the bases etc. All natural and delicious.
