Strawberries, strawberries, strawberries!

So, I picked up two bucket fulls of strawberries at my local markets this morning!  :)  Yum yum!  They're mostly seconds type ones, but will still be definitely eating some of them.  I'll probably freeze one bucket to make sorbet with.  But I need some ideas on what else I could do with strawberries.  We're not big jam eaters so making jam is out.

I'd be making some strawberry coulis and freezing it in small packs - always handy to dress up desserts with summer not too far away.  You can fold some through vanilla ice-cream or yoghurt if you make your own.

I mainly use my frozen strawberries in smoothies in summer as I don't make sorbet - I think I have only made 2 batches in 4 years.

I'm sure the girls will come up with some more ideas, jam would be on the top of my list though. Fresh scones with strawberry jam and cream is to die for.

I bought 2 punnets this morning, 1 is gone already.

Jam is easy. what about melting some choc to coat them..

strawberry vodka

Loosely fill a jar with strawberries and about a cup of sugar.  Cover with vodka and store somewhere dark and cool for 2-3 weeks.  Turn the jar every day or two.  It's ready when the strawberries are mostly white and the liquid is mostly red.

I usually decant the strained liquid back into an empty vodka bottle and keep it in the freezer.  Good in cocktails, over ice cream or over ice.

I did that with some strawberries and raspberries a few years back and then I forgot about it until recently.  I tried a sample and boy is it lethal !!!!!!!!!!!!!!!!!!!!!!!!!!!

There is a recipe in the EDC for stewed rhubarb and strawberries...yummy.
I'd do jam but as you don't eat it, how about coulis as Judy suggested. This is lovely over icecream, panacotta and lots of other things. Maybe cordial using the raspberry cordial recipe in the EDC but I would reduce the sugar by lots.
May all dairy items in your fridge be of questionable vintage.
