Great tweaks. My preference is always an ice cream maker for ice cream, but I write recipes for those without. A shot of Crio would be awesome as well!

I was very excited to try this, but alas the EVOO is too overwhelming for me.
I used a Cadbury old gold 70% chocolate (maybe this wasn't quite the quality Tenina had in mind?). Perhaps I should also have chopped the chocolate for longer as the final result was quite grainy.
I also used a cobram estate light flavor EVOO.
I didn't yet try with berries, again perhaps this would help?

Suzie the pic looks perfectly textured, but I do think you need the berries to cut back on the strength of the chocolate/EVOO flavour...hope you try again. Choosing the right oil is pretty important as well, you should be looking for one that actually states fruity on the label, there are a few around.

I didn't parbake the pastry case as if you have a pastry setting in your oven, and as the filling is already cooked, it isn't a train wreck if you don't...but by all means, do it if you prefer a crispy base. Personally I like a little bit of a soggy (though cooked) base with a fruit pie...I think its the English in me! hahahaha
All great suggestions from the girls as usual tho

I'm in the process of designing my dream kitchen for when we build and was wondering if anyone owns a steam oven or combi steam oven. If so how do you find it? Do you use it often? I'm thinking of getting a regular oven plus a combi steam oven but would live some opinions.

I have one, have had one for a while and I use it when I am absolutely needing another oven and feeding lots of people. Invaluable at Christmas and family gatherings...prefer the results to Varoma as more even cooking results. Have fun designing your new kitchen!

Dragonfly - I whipped it again and it separated and turned to mess!
I figured it out...because I did the same thing with another recipe I have been playing with. The cream was overwhipped. It then affects the whole texture of the ice cream...so under whip rather than over whip is the answer.... Hope you managed to enjoy it eventually!!

I have learned through experience, that the Thai class would be difficult to travel with. I need 2 days prep for 1 or 20 classes, if you know what I mean because of lead times on frozen stuff etc. So not a good traveller. Albany is still possible, tho I am so frantic with everything else, still not sure. Hopefully Sue!!

I am not sure why it would have separated Rostess. I have never seen that happen before, though perhaps it is because it gets eaten on the first round...never a second chance at my house. Wondering if it was to do with over beating which is possible with any dairy...will ask some questions of my dairy judging friends.
